One pot homemade chili



Homemade Chili

2 pound ground beef

1 onion, chopped

2 bell pepper chopped

1/15oz. chili ready can tomatoes

1/4 cup chili powder

2 tbsp. knorr tomate

2 tbsp. knorr pollo

1 tbsp. Garlic

1 packs of chili mix powder

2 lb. Pinto Beans cooked

In a large pot over medium heat, Brown your ground beef until well done drain all fat and then add your chop onions, bell pepper, and tomato. Sauté until onions are translucent add all the dry ingredients mix all together, add the raw beans, fill pot with water covering about 4 inches of water above the beans cover, let it cook for about  3 1/2 hours or more.  Checking every 30 minutes stiring in between. Let it rest for another 20 minutes after they have cooked.

Toppings optional; shredded mild cheddar cheese, sour cream, avocado, crackers, or tortillas.

Oh and if you do not want to cook fresh beans then buy can buy pinto beans from a can, still is very good.

Spicy Bacon Green Beans




1 bag frozen green beans
6 oz. Bacon cut up into bite size
1/8 tsp. Garlic salt powder
1 tbsp. Butter
1/2 of a small onion diced
2 small pinches of knorr pollo
A sprinkle of red pepper flakes

In a large pan on medium high cook the bacon until crispy.

Once bacon is crispy drain the fat then add the onions, saute until onion is translucent, now that the onion is done add the rest of the ingredients and add about 4 tbsp. Of water mix and cook for a minute in half on one side, mix and cook for an additional minute and a half.

Thanksgiving Menu

Here are some ideas for Thanksgiving.

 I've included some of my links one is for making homemade pie crust you make ahead of time freeze it and enough to last you a year, the other link is for your turkey preparing it and baking it in the oven or roaster, homemade dinner rolls, and many more links to make your whole Thanksgiving Dinner a success.

I got you covered.

First things first. If your lucky then you make a list an asign people to bring whatever you asigned, now they can bring it the day before or give them an earlier time so you're not stuck waiting for them the item you asked for...

Now don't feel you have to do everything on Thanks you can start preparing certain things the days before or a week before Thanksgiving.

Ok let's talk turkey.

Make sure you thaw out the Turkey in the fridge days before you are actually going to make the Turkey.

Bring out a big pot a turkey can fit into or use your ice chest... 24 hours before baking turkey Fill either one pot or cooler with cold water add salt, fresh crack black pepper, sugar, lemons, and oranges mix well add ice to this mixture, now lay your beautiful turkey in this bath making sure the Turkey is submerged all the way, covering the pot with a lid or closing the coolers lid down. before going to bed add more ice... Turkey needs to stay cold at all times so it doesn't spoil. In the morning pull your bird out drain all the water rinse pat dry set aside. Get you some butter add your spices to the butter combine and rub this butter under the skin and all over the outer skin and bake until done.

The ham if you have a slow cooker perfic use it to cook your ham freeing up your oven.

If your making homemade pies either buy the pie shells or you can make the dough today roll it out... start rolling them out and stacking them placing wax paper in between and take them out when you're ready to use it, or you can roll them out... (this is what I do) place them on pie pans putting a wax paper in between each layer then wrapping them in plastic wrap and freezing them and taking them out when needed. Make pies the day before.

Making homemade rolls follow all the steps to making them once they are baked let them cool, then wrap each one with plastic wrap then place them in a Ziploc bag seal and freeze... then the day before using them take them out to thaw. You can either wet a paper towel just moist enough not soaking wet and wrap your roll and warm it up in the microwave and butter them up and they are ready to eat.

The mashed potatoes peel, rinse, boil until tender do this a week before and freeze, take out the day before you use it boil them for a bit, like 10 minutes.. While the potatoes are warning up in another pot warm up your milk, salt, peper, or whatever you are adding to them... Start smashing them up... Mix all up and they are ready to go.

Veggies can be from can, frozen, or fresh.. Veggies cook fast so you'll do the veggies on thanksgiving.

Stuffing; a week before Thanksgiving, cut up all the veggies and anything you use for your stuffing make it like you normally do mix it up place it in the baking pan you're going to bake it in and place wax paper on the top of it then a foil or plastic wrap it freeze it and bring it out the a day Or two before to defrost in the fridge then bake it on the day you are using it.

Don't forget the drinks and ice or the cranberry sauce.

Don't be shy to ask for any kind of help, especially if the party is in your home have certain guest you feel comfortable asking to help you tidy up.

Another thing I do is tell everyone bring your own Tupperware to take leftovers home.

I hope this helps you out a little. That way you don't feel so overwhelmed and you have time to get ready and spend time with the guest and you won't be so tired.

Chicken PotPie



Pie crust link

Filling

2 tsp. Oil
1/2 c. butter
3 tbsp. Knorr Pollo
2 tbsp. garlic powder
2 medium potatoes diced
4 celery sticks sliced in 3 length wise and then slice to cubes
1/2c. all purpose flour
5 1/2 c. chicken stock from boiled chicken or bought
1 tsp. sage
1 tsp. Dry thyme
1 tsp. pepper
2 bay leaves make sure to pull out before serving
4 large leg and thigh  Boiled chicken shredded (save broth)
4 cups frozen mix veggies that has carrots and peas in it
1 sm. onion diced


Pour oil over medium heat in a large pot, add the onions, and celery, cook until onion is translucent, about 5 to 8 minutes then add potatoes, cook for a few minute then add knorr pollo, garlic, sage, thyme, pepper, bay leaf, chicken, and mixed veggies,  mix well cook about a minute mixing and  stirring, add 4 cups of the chicken stock, mix well cook until potatoes are tender...mixing once in awhile...before adding anything else (pull bay leafs out). While waiting for potatoes to get tender in a medium saucepan add butter melt then add flour cook for 2 minutes stir nonstop now add 1/2 cup chicken broth whisk until all is incorporated, add this thick gravy to your chicken and vegetables make sure potatoes are tender before adding gravy to it...now you've added the gravy mix well let it cook for 5 minutes cover and set aside to rest for 15 minutes 

Meanwhile roll out pie crust place one of the crust on a pie dish, trim to fit pie dish, with a fork poke a few holes at the bottom of pie shell bake for 6 minutes pull out and fill with the chicken filling and top with the other round raw pie crust crimp all the edges together and cut a slit in the center of pie. Nake intil golden brown.

Let cool for 10 to 15 minutes before serving

Creamy Pumpkin Pie


Creamy Pumpkin Pie

1/15 oz. can pure pumpkin

1/14 oz. can Sweetened Condensed Milk

2 large eggs or 3 small

1 tsp. ground cinnamon

1/2 tsp. ground ginger

1/2 tsp. ground nutmeg

1/2 tsp. salt

1/9 inch unbaked pie crust

Preheat oven to 425°

In a large bowl add all of the above ingredients, except the pie crust, whisk until smooth, pour mixture into the unbaked pie crust

Bake for 15 minutes. Then reduce oven temperature to 350° and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean.

Cool completely before you refrigerate. Top with cool whip.

Turkey Gravy



2 sticks of butter

2 tsp. black pepper

1 c. flour

8 cups pan drippings OR 8 cups chicken stock or 8 cups of the broth you boiled from the giblets in, from the stuffing. Or you can do half and half of any of these broth, or combine all 3.

Do not add salt yet until it's all mixed taste then add it if you need to.

If using drippings from turkey, pour drippings into a fine mesh strainer then allow the drippings to cool a bit so that the fat rises to the top and starts to solidify (I put mine in the refrigerator to rush the process). Use a spoon to scoop and remove the fat.

In a large pot, melt butter over medium heat, once melted add flour, constantly whisking until the flour toastes to a pretty golden brown now slowly pour in drippings and/or broth into the pan, constantly whisking let thicken up before adding more broth, continue this until you get the thickness/consistency you like.

Serve immediately, or put it in a warmer (slow cooker) on low heat.

Creamy Fluffy Mashed




A little tip for when your in a ruch; peel, cut into 1/4's, boil, drain, cool...

On a flat surface layout plastic wrap and dump your cool boiled potatoes on here, wrap the potatoes2 or 3 times them put in a freezer bag Ziploc seal and freeze. When your ready to use just pull out your potatoes the night before or the morning your using it and place it on the counter to defrost. Once ready prepare them as follows.

Creamy Fluffy Mashed Potatoes

5 lbs. medium potatoes, peeled, cut into large pieces

1 can evaporate milk

1/ 8oz. cream cheese, and softened

2 sticks of butter softened

2 tsp. garlic salt

3 tsp. black pepper


In a large pot add potatoes and add water to cover over the potatoes, cover with lid and bring to a boiling; reduce heat and cook until tender; about 20 25 minutes, then drain.

In another pot warm up milk, and all of the rest of the ingredients until the cream cheese melts. (keep an eye on the milk making sure it doesn't overflow).

While the milk is warming up mash the potatoes in large bowl until no lumps remain, add milk mixture in small amounts, mixing after each adding of milk mixture. (do not over mix potatoes will become gummy if overmixed and do not use a blender or hand mixer).

Homemade Old Fashion Cornbread Stuffing




A little tip for when your in a rush; you can cut all the veggies in this recipe ahead of time and the breading. Just cook as instructed below let cool. Once cooled plastic wrap your cornbread and drain and plastic wrap the veggies ziploc in a freezer bag and freeze until needed. Take out tge day before and let it defrost in the fridge and prepare as instructed below. For the broth use a ice tray to freeze or use a Tupperware container to save broth and freeze you can defrost in the microwave.

Homemade Old Fashion Cornbread Stuffing



Cornbread cooked and crumbled

1 tbsp. Sage

1 tbsp. Poultry spice

1 tbsp. Celery salt

1 stalk of celery sliced

2/15oz. Can whole corn. or 1 bag frozen

1 small pack giblets

1 chicken quarter leg

1 red bell pepper diced

1 onion diced

2/32 oz. chicken broth


In a large pot, heat 1 tbsp. Butter over medium-high heat, add celery, onions, and bell peppers and sauté for 2 minutes, then add the chicken broth, to this add the turkey neck, the chicken leg, the inside stuff that comes in the cavity of the Turkey, the giblets, sage, Celery salt, and poultry spice, boil until the giblets are tender enough to dice up. 

While you have this pot going get your cooked cornbread and crumble, to this add the whole corn, sprinkle with a little bit of thyme and wait to  add salt to your taste liking until everything is mixed, taste then add salt if needed. Sprinkle sage and poultry spice. Now scoop out the cooked mixture you just boiling (SAVE THE BROTH FROM THIS), scoop (onion, celery, bell pepper) make sure not to burn yourself and add this to the corn bread and set aside, pull out the chicken (shredded chicken then chop into small pieces), turkey neck (pull meat of the Turkey neck bone once you have done this then chop into smaller pieces), the gibblets, slice and dice into small pieces, add all of the meat you just cut up to the cornbread mixture and mix, now add a cup at a time of the broth that you just saved add mix well  and taste to see if it needs salt or anymore of the other spices, if it's still to dry continue to add the broth until you get a smooth pasty cornbread mixture (not soggy, just moist). If you do add anything at this point make sure to mix it well.

The the rest of the broth you will be using it to make the gravy.

Once you mixed it, dump it into your baking dish that has been sprayed with nonstick spray, smooth it out and bake @ 325° for 30 minutes rotating the pans making sure not to burn yourself. Bake another 30 to 45 minutes or until golden brown and the toothpick you insert comes out dry. (if the top is browning to much cover with foil and continue to bake).

Sweet Cornbread


Sweet Cornbread

1 1⁄2 cup cornmeal
3 cups flour
2 cup sugar
3 tbsp. baking powder
1 1⁄2 tsp. salt
1 cup oil
9 tbsp. melted butter
6 eggs, beaten
3 cups milk
3/4 chicken broth /stock

Preheat oven to 350º. Spray baking pan with non-stick baking spray.

In a bowl, combine all dry ingredients then add the wet ingredients, makes 9 mini loaves, or 3 large loaf, or 3 / 8 inch square.

Depending on the oven and also depends if you use metal or glass to bake the cornbread, it will take anywhere from 18 minutes to 45 minutes. Just check at 18 minutes with a toothpick it should come out clean. I did the mini loaves that took  22 minutes

Homemade pie crust make ahead of time and freeze

1- 5lb bag of all purpose flour (hold back about 2 cups)

2 lbs. shortening (Crisco) chilled

1 lb. Butter chilled

4 Tbsp. sugar

2 Tbsp. + 2 tsp. salt

4 Tbsp. vinegar

4 eggs

2 c. water

In a large large Tupperware add flour, sugar, and salt mix well.

Using pastry cutter if you have one, or 2 forks, blend the butter, and the shortening with the flour mixture. When flour mixture and shortening are combined (resembling crumbs) set the mixture  aside.

 In another bowl add water, eggs, and vinegar and wisk until combined.

Add wet mixture to the flour mixture mix until it has combine into a soft dough ball.

Once it has formed , Continue to mix by hand forming dough into a ball, pressing flat, cut into four portions wrap with plastic wrap and refrigerate for for 20 minutes.

Now the 2 cups of flour use to flour your surface and hands, you won’t use it all.

Cut each of the dough ball in quarters, into four equal parts, you should have 16 equal pieces of dough.

Roll each dough portion into a ball, then flatten to about a two inch disk, be careful not to overwork the dough.

Wrap each disk individually in plastic wrap, I wrap mine once and the I use my sealer to store them, but you can wrap them twice then put them in a freezer Ziploc bag, and store in the freezer for a year.

Mine don't last a year since I bake a lot, but should last a year.

Each dough ball makes one pie crust bottom or top.

To use, remove the pie disk you from the freezer and allow to thaw on the countertop or in the refrigerator.

If you have any scraps leftover put the scraps in a freezer bag and save them, put back in the freezer, once you have collected enough scraps in the bag you can get another pie or two from all the scraps.

Thanksgiving Turkey



The juiciest, moist, melt in your mouth Turkey.

 Preheat oven to 350°

 1 turkey, already brined, rinsed and patted dry

3 tbsp. Ground thyme or freshly chopped

2 sticks of butter softened

3 tsp. ground black pepper

3 tbsp. Ground or freshly chopped sage 

1 tbsp. Knorr pollo (🐔 chicken bouillon)




turkey, already brined, rinsed and patted dry, setting it aside.

Now in a small bowl, mix all the spices and the butter until well combined, set aside.

You can use gloves or not but take off any jewelry.

Loosen the skin over the turkey breast, and gently running your fingers across taring the thin linning be careful not to tare the skin.

(Make sure to dry with paper towels before rubbing the outside of the skin or the butter won't stick.)

Now spread the spiced butter under the skin gently rub the turkey with the butter under the skin add all over the outside of the skin. You can add some bayleaf under the skin if you like.

Place the turkey, breast side up in your roaster or the center of a roasting pan placed in a preheated oven.

Roast the turkey uncovered for about 60 minutes, (basting in between) 

Make a tent foil to cover over the turkey if it's browning to fast, also make some for the legs they tend to brown first. 

Roast the turkey for an additional 2 hours, basting it with the pan drippings every 30 minutes. The turkey is done when a digital thermometer inserted in the thigh pops out.

Let it sit and rest for 10 to 15 minutes before carving.

Remove the turkey from the roaster or oven be careful not to burn yourself.

Save drippings for making a gravy
