Crockpot Caldo De Res


CrockPot Caldo De Res (beef soup) served with a scoop of Mexican rice, avocado, limes, salsa, and tortillas.

I use my crock pot

2 lbs. of short beef ribs
15 mini Potatoes bite size, they come in 3 assorted colors
1 onion, sliced
2 carrots, sliced
1/4 purple of head of cabbage, cut in half
1 medium sliced green zucchini
1 medium sliced yellow zucchini
1 can whole corn
2 tbsp. garlic powder
2 tbsp. Ground Cumin
1 tbsp. of Knorr Pollo/Chicken add more if needed
1/32oz. Beef stock
1/32oz. Low sodium chicken stock
Uncle Chris spice

sprinkle all the ribs with uncle chris spice set aside let them rest for about 5 minutes, then while the ribs are resting get a pan add 1 to 2 tbsp. oil heat at a medium high, with tongs grab one of the ribs and sear on all sides, set on a plate to rest while you sear all the ribs.
In the preheated crockpot add ribs and all the veggies but not the onion cover with lid.

In the same pan you seared the ribs add the sliced onions and cook until onions are translucent add the sliced jalapeno cook for about a minute then add your stock, and spices and let it warm up, once the broth has warmed up pour it in the crockpot and let it cook for about an 1 hour after the first hour mix cover and let it cook an other hour and mix repeat this for 6 hours or until the ribs are falling off the bone.

An hour before it is done add your cabbage and cook for an hour.

Serve hot. Just before eating, add a scoop of Mexican rice to your bowl, squeeze in fresh lime juice, salsa or tabasco to taste. Warm corn/flour tortillas rub with lemon add avocado.

Fun Candy Apples










Candy Apples
Not your typical boring red candy apples anymore.


You will need;

Non-stick spray any brand

Cookie sheet

Candy Thermometer

Medium pot

Wooden spoon

Measuring spoons tbsp. And tsp.

Liquid measuring cup

Spatula

15 popsicle sticks

15 small snacking apples(super juicy, tangy-sweet) dipped in hot water, wiping the wax off, dry & remove stems

3 cups of white sugar

½ cup light corn syrup (karo)

1 cup water

1 tsp. vanilla

2 Tbsp. American white soft gel paste food coloring

2 tsp.  American gel paste food coloring of your choice, the more color you use, the brighter the color will be, I used Orange.

Spray your cookie sheet with a non-stick spray set aside.

In a med pot, sugar, corn syrup, and water over high heat, before turning heat up high inserted the thermometer but make sure the tip is not touching the bottom of the pan, mix well until sugar dissolves, bring to a boil.

 Once it starts to boil let it continue to boil until it reaches 302° on your candy thermometer.

This can take up to 20 minutes.

Once it starts to boil do not stir, let it do it's job just watch it...

When it reaches the hard crack 302° turn heat off and work quickly, be careful not to burn yourself, at this point add both colorings, and the vanilla, mix well and work quickly  the candy will cool fast and you need it hot to easily cover the apples and keep it from getting the look of bubbles and holes in the candy apples.

Ok ok now your ready to
dip your apples,  tilt your pot a little to help cover the apples, Swirl the apple tap a little letting the excess candy drip a little and this tapping will also give the candy in the apple a smooth look,

Place apples on the cookie sheet sprayed with the non-stick spray.

Repeat the process for the remaining apples.

By the time you finish dipping the last apple, the first few Apple's are cool anf ready to eat, now if you want to add any sprinkles you can do it as soon as they come out from dipping but this will give the candy in the pot time to cook and you don't want that, or you can lightly cost the candy apple with a very very thin layer of corn syrup and then sprinkle, or decorate it for the holidays.

Don’t refrigerate they will become very sticky and will start to bleed kinda like melting.

Apples will keep in an airtight container for about 5 days, not that they will last, but if storing keep in a cool place or they will melt. The longer you store them the more sticky it gets.

Beef Soft Tacos

Beef Soft Tacos


2 lb. ground beef or chicken
½  diced onion
1 TBSP. chili powder
1 TBSP. Garlic powder
1 TBSP. Cumin powder
1 TBSP. Knorr Tomate (Tomato Bouillon) powder
1 TBSP. Knorr Pollo (Chicken Bouillon) powder
½ small can of tomato sauce
1 package of corn/Flour tortillas (12 count)
Optional shredded cheese, lettuce, tomato, sour cream, avocado, salsa, and/or pico de gallo.

With all the spices you can add more or less it's to your liking.
In a large pot over medium-high heat  Break the meat up,  Continue to stir the meat, breaking it into smaller pieces stirring frequently, until the meat is no longer pink drain all the fat and place back in the pot add your onions and continue to cook until onion is translucent, now add all your spices, mix well add your tomato sauce and 1/2 cup of water mix well continue cooking it until water evaporate.

Fill the tortillas with the beef or chicken and serve with the toppings of your choice. Of course you may use your homemade crispy taco shells, or even flour tortillas for soft tacos, but today I bought my shells.

Clear glazed for fruit on cakes






12 cup sugar

2 tablespoons cornstarch

1 cup fruit juice

2 tablespoons corn syrup





Bring the sugar and 1/2 cup juice to a boil. Dissolve the cornstarch in the remaining juice. Add to the boiling juice and cook till thick. Stir in the corn syrup. Bring back to a boil and remove from heat. Cool and drizzle over fruit on cake.

One Pot Meal, Cheesy Chicken Broccoli




3 tbsp. oil
½medium yellow onion, diced
10 small boneless skinless chicken thighs
3 cloves of garlic mince
2 cup uncooked Jasmine rice
2½ cups broccoli florets, cut into bite sized pieces
1 large carrot shredded
1/32 oz. cups of chicken broth
2 cups shredded cheddar cheese
2 tsp. Pepper
3 tbsp. butter


In a large pot on medium heat add oil, onions, and carrots saute for 2 minutes add garlic, mix well then add chicken mix and cook for about 5 minutes mixing in between, after the five minutes add rice and broth increase the heat to high bringing it to a boil, once it starts to boil reduce heat to a medium high add broccoli and cook until chicken is cooked through and rice is tender, cover pot with a lid. Once cooked turn heat off and add butter, pepper and cheese mix well until cheese melts, sprinkle with the green part of the green onions.

Homemade Chipotle Beans


Homemade Chipotle Beans...

2 lbs. beans
10 c water + 2 more c.
1 TBSP. Cumin
1 TBSP Garlic
1 TBSP. Knorr Tomate Powder
1 TBSP. Knorr Pollo Powder
½ can of tomato sauce 4oz.
1/2 can Chipotle peppers in adobo sauce
1/2 onion diced
1 green bell pepper
1/2 a pack of bacon cut strips in small 1 inch cuts

Clean and get rid of dirt rocks and broken beans first, then rinse the beans really good. Place the pinto beans in a large pot add water and let them soak overnight they will expand (but you can cook them right away if you like), rinse one more time and discard the water, now place the clean beans in you pot with water add all the ingredients from above. Bring to a boil, reduce heat to medium-high, and continue cooking stirring occasionally, until beans are tender add water as needed to keep the beans moist I used a total of 12 cups of water but I like my beans juicy. These are one way of making the beans.

Following the same process as above but before add the Chipotle and bacon... to give it a different flavor...add bacon strips from the beginning of the cooking, I've even added sausage, chicharones/pork skins the plain ones, Want to make them Charro Beans add Pico de Gallo to it at the end when they are done cooking or my favorite Borracho Beans in a medium pan add 1 tsp. oil add Pico de Gallo to the oil, sauté about 2 minutes add 1/12oz can of your favorite beer cook for a minute then add it to your cooked beans. Cooking time 2 hours depending if the beans are fresh or old mine where fresh the older the bean the longer they take to cook. Cook until tender.

Turkey Gravy

1/2 c. butter or oil but taste better...
1/2 cup + 3 tbsp. all-purpose flour
1 tsp powdered garlic
1/2 tsp black pepper
4 c. Of liquid mixture
1/30oz. can chicken stock
5 sticks Celery
1/2 onion
Save the turkey neck & the bag of the insides of the turkey
1/2 tbsp. Sage
1/2 tbsp. poultry seasoning
1/2 tbsp. pepper

In a pot add the turkey neck & the insides of what's in the bag of the turkey, onion, celery, sage, pepper, and poultry seasoning. Boil until the turkey neck is done. Once it's done to this you will add a cup of chicken stock and the turkey drippings m I x and let it rest for a bit the fat of the turkey will rise spoon out the fat as much as possible keep the rest of the liquid. Now
drain the liquid mix through a fine strainer, set aside. Now In medium pot- melt butter and add flour mix constantly on low heat you will start to see it brown, once you see it brown you slowly add in liquid mixture – whisk constantly over low-med heat until bubbly & thickened keep on adding the liquid until the gravy is to the thickness or thinness you like.

Multicolor Tie Pasta with My Spaghetti Meat Sauce

1 Medium Onion, finely chopped2 (28oz) Cans of Tomato crushed Italian herb flavor ...
2 small can of tomato paste Italian herb flavor
1 (8oz. tomato sauce)
1 lb of Italian sausage
1 lb of ground beef
2 tbsp. knorr tomate
2 tbsp. Italian spice mix
2 tbsp. garlic powder
2 tbsp. onion powder
2 tbsp. black pepper powder
2 tbsp. dry oregano
1/2 cup of Italian Mix Shredded cheese
3 tbsp. parmesan cheese fresh or powder
1 small container of sliced mushrooms (Optional)
Fresh grated Parmesan Cheese for topping (Optional)

Homemade Fideo




2 tbsp. oil
1 package fideo
1/2 tsp. ground cumin
1/2 tsp. ground garlic
1 tbsp. knorr pollo
1 tbsp. Knorr tomate
4 oz. can tomato sauce
32 oz. Of chicken broth unsalted if salted reduce the amount of the knorr spices they have salt. + 2 cups water. I like my fideo soupy if you don't then do not add the water.


Heat oil in a saucepan over medium-high heat add the fideo and fry until golden browned. Once it has browned then add all of the above ingredients wet ingredients first, stir well. Bring to a boil and cover with pot lid, and cook until the fideo is tender about maybe 10 minutes to 15 minutes, taste to test for tenderness, be careful not to burn yourself.

Now yes it sounds weird but trust me it really makes your Mexican pastas taste so good. I use this secret ingredient that I've never told anyone I always just give you the way I would do it, or everyone does it... but here is my secret ingredient I use for all my Mexican pastas from conchitas, macaron, estrellitas, sometimes in my freshly made beans, and in my fideo it's Velveeta cheese yes Velveeta cheese...once your pasta is done turn off the heat and drop about 2 oz. Of Velveeta cheese mix until it dissolves.

I also add Velveeta cheese to my spaghetti meat sauce along with 1 cup of shredded cheese. There you go so the next time you make one of the Mexican pastas try it and you will love it...I've yet to try it in the rice. On this photo the black specs are black pepper I love adding black pepper to all of my foods on my plate. Mmmm

Ravioli Meatball Spaghetti Meat Sauce, with garlic bread, and lemon pepper wings.



2 bags frozen beef ravioli (do not defrost)
1 bag frozen Italian meatballs
1 Medium Onion, finely chopped
2/(28oz) Cans of Tomato crushed Italian herb flavor
2 small can of tomato paste Italian herb flavor
1 (8oz. tomato sauce)
1 lb of Italian sausage
1 lb of ground beef
2 tbsp. knorr tomate
2 tbsp. Italian spice mix
2 tbsp. garlic powder
2 tbsp. onion powder
2 tbsp. black pepper powder
2 tbsp. dry oregano
1/2 cup of cheddar cheese 3 tbsp. parmesan cheese fresh or powder
3 fresh basil leaf chopped finely
I do not add salt because the knorr tomate has salt in it so once you taste the sauce you can add more knorr or salt it's up to you.
For meat sauce
In a pot over medium high heat, add the ground beef and Italian sausage cook until its pretty much all cooked through remove from the pan with slotted spoon drain all the fat, now add the meat back to the pan and add the basil, and onion cook until the onion is translucent, once this is done add all the dry spices mix well then add the wet ingredients and 1/2 cup of water mix well then bring to a boil and reduce the heat to medium low, cover it and let it simmer for 30 minutes stir from the bottom up every 5 minutes. 15 minutes into the simmering add meatballs mix and let it simmer for the last 15 minutes. The last 5 minutes of cooking add 1/2 cup of cheddar cheese and 3 tbsp. parmesan cheese fresh or powder whatever you like, it really makes a difference in flavor.

For raviolis
In a large pot add water and some salt bring to a boil, once it starts to boil add the frozen raviolis and let it boil, raviolis will rise to the top when it's done cooking.
Serve immediately top with sauce above and sprinkle some parmesan cheese on top, serve with garlic bread, and lemon pepper wings.

Cheesey Bacon Wrapped Jalapeno



These cheesy jalapenos are the BOMB!!!

I've been eating so many different types of the bacon wrapped jalapeno, I've tried chicken flavor ewe yuck, and I forced myself to eat it, I was just about to spit it out onto a napkin when the host of the party walked up and asked, how do you like them, I smile and swallowed and said they were really good, omg I chugged my drink to take the taste out of my mouth, ewe nothing worked. I've had some with sliced cheddar cheese, others with just plain sharp cheddar, some with tuna no please do not try the tuna really bad idea. and of course the same old cream cheese and all these were not for me...

I didn't know what all the hype was, then I went to visit my baby brother and he BBQ for us and yes like always the famous jalapeno bacon wrapped made it to the table again, so once again I tried them so I wouldn't be rude, OMGOODNESS!!! WHAT WAS THIS ??? Jalapenos bacon wrapped and I fell in love with this delicious goodness, the stuffing in the jalapeno made the big difference, you must try this Monterey cheese, not only with the jalapenos but on tacos, tostadas, oh so many dishes you can use this cheese in... so what are you waiting for go make you some bacon wrapped jalapenos and while your at it wrap your corn on the cob to oh my its true what they say everything is better with bacon. 


12 large whole fresh jalapeños, seeds and membranes removed
16 oz. block of Monterey Cheese, at room temperature
1 package of bacon = 12 whole slices

First thing wash your jalapenos, dried them and cut the stem off with a thin sharp knife, be careful not to cut yourself, once you cut the stem off use the knife and run the knife on the inside of the sides of the jalapeno and deseed and throw away the seeds.

cut the cheese into 12 even slices, insert the cheese into the jalapeno grab one slice of bacon and start to wrap it around the jalapeno starting at the very top covering the hole where the cheese was inserted, insert toothpicks to help keep the bacon in place, repeat these steps with the remaining jalapenos. 

ok all your jalapenos are wrapped you're ready to cook them, I have my BBQ grill hot and ready to go, place all your jalapenos on the grill and let them cook until the bacon is completely cooked nice and crispy

If cooking on the stove place a pan on medium high and lay a layer of the wrapped jalapenos cook on all sides until the bacon is completely cooked and crispy.

If cooking in the oven preheat oven to 450*, line a baking sheet with parchment paper and place all your wrapped jalapenos on the baking sheet and bake for 20 to 25 minutes, until the bacon is done and crispy. Serve immediately.

I love the way the BBQ wrapped jalapenos taste compare to the others. .
