Pumpkin Spice Latte



This recipe maked a lot so use what you need and save the rest.

Pumpkin Spice Latte

1/15oz. 100% Pure pumpkin
5 tbsp. sugar
1c. Brown sugar
1 tsp. Cinnamon
1/4 tsp. nutmeg
1/4 tsp. Pumpkin spice
1 c. Water
1 tsp. vanilla

In a med pot on medium heat add all the ingredients above except vanilla simmer for 20 minutes, once it's done simmering turn heat off and add vanilla mix well.

Warm up one cup of coffee and one cup of milk mix and add a spoonfuls one at a time until you get the desired taste you like top with a dollop whipped cream and sprinkle a tiny bit of cinnamon on top. Easy Peasy

Pumpkin Waffles



2 cups flour
3 tsp. brown sugar
3 tsp. of baking powder
1 tsp. of baking soda
1 tsp. of cinnamon
1 tsp. pumpkin pie spice
1/2 tsp. salt
1 tsp. vanilla
1 1/2 c. of milk
1 c. of canned 100% pure pumpkin
1 egg yolk plus 3 egg whites
4 tbsp. melted butter
2 tbsp.apple cider vinegar


In the bowl combine dry ingredients mix well and set aside. In another bowl combine wet ingredients but not the egg whites. Now in another bowl whip 3 egg whites until stiff peaks form set aside.
Time to combine all three bowls first add pumpkin mixture to dry ingredients and mix well, now gently fold in stiff egg whites.

Use batter immediately in waffle maker.

Cook according to your waffle maker instructions.

Top with maple syrup or any topping you desire.

Homemade Cabbage Rolls





1 Large Head of  kool Cabbage or any cabbage you can find
1 Onion, finely chopped
2 tbsp. Garlic powder
2 1/2 lbs. Ground Beef
1 c. Cooked Rice
1 Egg
1/2 c. Bread Crumbs
2 Tbsp. Worcesteshire Sauce
1 tsp. Salt and Pepper or To taste
1 Tbsp. of Brown Sugar
1 Tbsp. Rice  Vinegar

Marinara sauce recipe below, use all of the sauce from the recipe below...

 Fill a large pot with water and bring to a boil drizzle some salt mix then slowly  drop the cabbage in and cook it for a few minutes or until the leaves become pliable. Allow to cool for a few minutes.

 In a large bowl, combine the ground beef, onion, garlic, egg, rice, sugar, bread crumbs, rice vinegar, worcesteshire, salt, and pepper, mix well. Layer the bottom dish with leftover cabbage leaves then top with half of the marinara sauce in the bottom of a baking dish set aside. Now get one leaf and lay it flat in front of you, cut out the stem and place about ¼ of a cup of filling in the center of each one, roll it up making sure to tuck in the sides (roll like an egg roll or a burrito) and place it seam side down in the baking dish if they don't fit side by side then stack them on top of each other, once you finish rolling the cabbage rolls then pour the remaining sauce on top and bake them covered with foil on  350º  for 35 minutes then uncover and bake for 25 minutes more, serve on a buttery bed of rice.

Best Homemade Marinara Sauce

1/26oz. can of condensed tomato soup
1/12oz. Tomato paste
2/15oz crushed tomato
2 fresh basil leaves sliced and chopped finely
1 tbsp. garlic powder
1 tbsp. Italian seasoning
1 tbsp. Knorr de res (beef bouillon)

On medium high heat put a pot with all the sauce ingredients above mix well let it simmer for 7 minutes mix and simmer for another 7 minutes, turn heat of and let it rest for 10 minutes.

This sauce is also good for dipping your cheesy bread or pizza or however you like your marinara sauce.

Moist Banana Bread



Just a little tip to save you time when you want something delicious for breakfast or with your coffee. Make the banana bread as instructed below, once its baked cool completely, then once it has cooled wrap each loaf 2 or 3 times with plastic wrap then pack them in a freezer Ziploc. When you're ready to use you can defrost in a microwave or leave on the counter until it defrosts completely and enjoy


3 flour
1 tbsp.  Ground cinnamon
2 tsp.  Baking soda
2 c sugar
2 TBSP. Vanilla or banana extract
1 c. Vanilla pudding, sour cream or plain yogurt
1 c. butter
4 eggs
7 medium riped Bananas
Pecans or Walnuts Optional

you can make it diabetic friendly buy changing the flour to wheat flour the sugar to Splenda the sour cream to a lite sour cream the banana has natural sugars so its friendly until you get to the banana lol

Instructions

Preheat oven to 325* – 350* depends on your oven. Spray your bread pans with baking spray. Makes 4 medium loaves with 6 small round cupcake style muffins, 8 / 4inch round diameter baking cups each one takes one cup of batter, or 2 very large loaves. In a large mixer blend together the sugar and the butter add 1 egg at a time then add bananas mix until broken down a little smooth with small chunks now add the rest of the ingredients Mix well, if using nuts fold in once batter is mixed. Bake for about 30-45 minutes for large loaf, for muffins about 15 to 20 minutes,  may take a bit longer just check with a toothpick if it comes out clean.

Creamy Rosemary Orzo with cheese



3 tbsp. Butter
1 tbsp. Oil
1-½ c. Orzo
3 c. beef Stock
1 c. heavy cream
1 sprig of rosemary choped
2 cloves of garlic minced
1/2 an onion diced
1 c. Monterey Cheese

In a pan over medium heat add oil and melt the butter, add the orzo and saute for 3 minutes, or until the orzo starts to get golden brown, add onion, garlic, and rosemary stir and cook until onion is translucent,  now add broth and cover and simmer for 10 minutes stir cover cook for another 10 minutes, cook until all the broth has been absorbed. Remove from the heat, add the cheese and add salt and pepper to taste.

Grilled Blackened Tilapia



Blackened seasoning
Lemon pepper
9 pieces of talapia

Spread your fish on wax paper and generously sprinkle each side of the fish with both spices from above, I used a grilling tray sprayed it with non-stick spray then placed the tilapia on it and then placed the tray on the bbq pit bbqing it for 3-4 minutes per side depending on how thick the fish is...serve with any sides you like, I served mine with a orzo rice and green beans.

Homemade Chipotle Beans



2 lbs. beans
10 c water + 2 more c.
1 TBSP. Cumin
1 TBSP Garlic
1 TBSP. Knorr Tomate Powder
1 TBSP. Knorr Pollo Powder
½ can of tomato sauce 4oz.
1/2 can Chipotle peppers in adobo sauce
1/2 onion diced
1 green bell pepper
1/2 a pack of bacon cut strips in small 1 inch cuts


Clean and get rid of dirt rocks and broken beans first, then rinse the beans  really good. Place the pinto beans in a large pot add water and let them soak overnight they will expand (but you can cook them right away if you like), rinse one more time and discard the water, now place the clean beans in you pot with water add all the ingredients from above. Bring to a boil, reduce heat to medium-high, and continue cooking stirring occasionally, until beans are tender add water as needed to keep the beans moist I used a total of 12 cups of water but I like my beans juicy.  These are  one way of making the beans.

Following the same process as above but before add the Chipotle and bacon... to give it a different flavor...add bacon strips from the beginning of the cooking, I've even added sausage, chicharones/pork skins the plain ones,  Want to make them Charro Beans add Pico de Gallo to it at the end when they are done cooking or my favorite Borracho Beans in a medium pan add 1 tsp. oil add Pico de Gallo to the oil, sauté about 2 minutes add 1/12oz can of your favorite beer cook for a minute then add it to your cooked beans.  Cooking time 2 hours depending if the beans are fresh or old mine where fresh the older the bean the longer they take to cook. Cook until tender.

Country Fried Pork Chops



8 Thin, pork chops
4 eggs
2 tablespoons Worcestershire sauce
1/5oz. Can of evaporated milk
2 cups flour
1 tsp. salt
2 tbsp. uncle chris seasoning
1 tsp. garlic powder
1 tsp. pepper
Oil for frying – about 3 cups


In a pot heat oil over medium high heat. Start mixing milk, eggs and worcestershire sauce in a shallow bowl set aside, now prepare breading
In a large bowl mix all the dry ingredients.
Dip pork chops in the flour first, then in the egg wash then back to the flour making sure to coat both sides, carefully and slowly place the battered chops in the hot oil and cook for 3 1/2 minutes, or until you can see the edges beginning to brown a pretty golden brown. Flip and cook for an additional 3 1/2 minutes. Once cooked remove from hot oil and place on a rack with paper towels, to help obsorb any excess oil.

Serve with a side salad, corn on the cob, baked or mashed potatoes, mac n cheese, or green beans.  Any side dish will do.

Mexican Chicken Stew



(with a little kick to it)

3 breast of chicken boiled and diced or shredded 
1 zucchini sliced the long ways in half then half again then slice in bit size chunks 
2 Small Tomatoes diced into big chunks  (I used cherry tomatoes sliced in half)
1/15oz. can whole corn
1 small can tomato paste 
1 Can of Tomato sauce 
2 tbsp of Comino (Cumin)
1 tbsp of Chile powder
2 tbsp.  Garlic powder 
2 tbsp. knorr pollo 
1 tbsp. black pepper 
1 hatch chile sliced in 4
1 green/red bell peppers diced
1/2 onion diced
2 cups frozen veggie mix
Oil

In a large pot put the chicken to boil until no longer pink, once it's done boiling pull out and cut into chunks or shredd the chicken. (Save broth from the chicken boiling)

While chicken is boiling...cut up all your veggies set aside.

Now in another pot add 2 tbsp. Oil add onion bell-pepper sauté until the onion is translucent, then once onion is translucent add the rest of the veggies and the chicken cook for 5 minutes stirring occasionally, after the 5 minutes add the rest of the ingredients plus the chicken stock from the boiling chicken you cooked earlier, fill about an inch or two above the food in the pot, cover and cook until the zucchini is tender. Make sure to stir occasionally. 

Serve with a side of beans if you like but no sides are needed for this dish. You will need some tortillas to enjoy it even more and some salsa

Cheesy Corn Beef Goulash



3 lbs ground beef
2 tbsp. garlic powder
3 cups beef stock
1 (4 oz.) can tomato sauce
1 small can tomato Italian paste
2 TBSP Italian seasoning
3 bay leaves
2 TBSP. Knorr de res (Beef Bouillon)
2 cups pasta, uncooked, cook according to instructions  (I used Healthy Harvest 100% whole Grain Rotini)
1 cup shredded cheddar cheese
1/2 onion
2 cups of corn

Add ground beef to a pot over medium-high heat  cook until no longer pink drain, add onion cook until translucent then add all the dry spices cook for about 3 minutes stirring constantly, add beef broth , tomato sauce and paste, stir well cook for 5 minutes stir cover and cook another 10 minutes,  take bay leaf out add cheese mix well cook for 3 minutes then add cooked pasta stir well, turn off heat, let it rest for 10 minutes.

Enjoy

Serve with a dinner roll and salad.

Homemade Chicken A La King



8 Biscuits store bought or homemade here is the link to my homemade biscuits...my biscuit recipe makes 24 biscuits.

2 tsp. Oil
1/2 c. butter
3 tbsp. Knorr Pollo
2 tbsp. garlic powder
2 medium potatoes diced
4 celery sticks sliced in 3 length wise and then slice to cubes
1/2c. all purpose flour
5 1/2 c. chicken stock from boiled chicken or bought
1 tsp. sage
1 tsp. Dry thyme
1 tsp. pepper
2 bay leaves make sure to pull out before serving
4 large leg and thigh  Boiled chicken shredded (save broth)
4 cups frozen mix veggies that has carrots and peas in it
1 sm. onion diced


Pour oil over medium heat in a large pot, add the onions, and celery, cook until onion is translucent, about 5 to 8 minutes then add potatoes, cook for a few minute then add knorr pollo, garlic, sage, thyme, pepper, bay leaf, chicken, and mixed veggies,  mix well cook about a minute mixing and  stirring, add 4 cups of the chicken stock, mix well cook until potatoes are tender...mixing once in awhile...before adding anything else (pull bay leafs out). While waiting for potatoes to get tender in a medium saucepan add butter melt then add flour cook for 2 minutes stir nonstop now add 1/2 cup chicken broth whisk until all is incorporated, add this thick gravy to your chicken and vegetables make sure potatoes are tender before adding gravy to it...now you've added the gravy mix well let it cook for 5 minutes cover and set aside to rest for 15 minutes while the chicken and veggies are cooling start baking your biscuits. Your biscuits are done split in half, top with the chicken and vegetables and gravy mix. You can also use this recipe for your chicken pot pie or add some noodles to it as well.

CHICKEN SALAD SLIDERS



2 chicken breast cooked and shredded
2 sticks of celery
1/4 of a small onion diced
1/2 Cup Mayonnaise
1/4 cup Mustard
1/4 cup sweet relish
1/2 Teaspoon Salt
1/4 Teaspoon Black pepper

Dinner Rolls homemade or store bought
Link to homemade dinner rolls

In a medium bowl, combine all of the ingredients above refrigerate for at least 30 minutes before serving. Slice dinner rolls spoon chicken salad into each dinner roll and serve.

Flautas en tortillas rojas

Red Chicken Flautas

3 chicken breast boiled n shredded
1/4 cup onions, diced...
2 teaspoons cumin powder
2 teaspoons garlic powder
1tbsp. Knorr Tomate
1 tbsp. Knorr Pollo
1teaspoon pepper
2 ounces of tomato sauce
24 to 30 red corn tortillas softened in oil

1. In a large pot, combine the shredded chicken along with onions saute until onion looks translucent, then add spices, stir well to combine, taste n add more spices if needed. Add the tomatoes sauce n a little of the water from where you boiled the chicken. Cook until the water evaporates.

2. Preheat 1 cups of oil to medium heat in a heavy, deep skillet or pan.

3. start filling and rolling. Add about 3 to 4 tablespoons of filling in each tortilla. Roll as tight as you can, place seam down. Roll all the tortillas first.
4. Cook the flautas for a minute or two on all sides or until golden and crispy.

Serve with some fluffy rice and beans. Oh maybe some sour cream, avocado, salsa or pico de gallo, or any topping of your choice.

Spicy Lemony Chicken



5 boneless chicken breasts
2 sticks of butter
1 lemon squeezed juice only
1 tsp. garlic powder
1 tsp.  salt
2 tsp. Cheyenne pepper
Lemon pepper for sprinkling

Heat oven to 350 F.

Coat a cookie sheet with non-stick spray

In a pot, combine all the ingredients above but not the chicken, cook for a minute and dividing it into two save it for pouring over the chicken half way through baking.

Dip the chicken breasts into the spicy butter one at a time place on the cookie sheet baked for 15 minutes then  pour the remainder of the spicy mixture over the top of the chicken then sprinkle with lemon pepper and place back into the oven and bake until fully cooked.

Serve with a salad or a rice.
