Healthy Spaghetti with veggies and a Turkey Ground Meat Sauce



1 - 16 oz. package of whole grain spaghetti, cooked according to the directions on the package.

For sauce

1/2 Onion diced
1 (28oz) Cans of Tomato crushed Italian herb flavor
2 small can of tomato paste Italian herb flavor
1 (8oz. tomato sauce)
2 lb of ground turkey
2 tbsp. knorr tomate
2 tbsp. Italian spice mix
2 tbsp. garlic powder
2 tbsp. onion powder
2 tbsp. black pepper powder
2 tbsp.  dry oregano

 Veggies to be cooked and added to spaghetti

1⁄2 small container of sliced mushrooms
1/2 Green bell pepper
8 oz. Fresh spinach
1/2 of a large tomato diced big
1/2 sliced onions
Oil
Instructions for veggies
In a pot add 1 tbsp. oil and all the veggies except spinach, first cook veggies until the onion translucent and a little caramelized turn heat off then add the spinach toss some spaghetti in the cooked veggie pot mix and set aside.

I do not add salt because the knorr tomate has salt in it so once you taste the sauce you can add more knorr or salt it's  up to you.

 Optional sprinkle with parmesan

For spaghetti sauce

 In a large pot over medium high heat add 2 tbsp. Oil, ground turkey cook until all cooked through, now add the onion cook until the onion is translucent, add all the dry spices mix well then add the wet ingredients and 1/2 cup of water mix well then bring to a boil and reduce the heat to medium low, cover it and let it cook for 30 minutes to an hour Stir from the bottom up every 5 minutes.

Pour sauce over spaghetti, sprinkle with Parmesan cheese, serve with a yummy salad.

Goritas

Gorditas

2 cups masa harina
1/2 teaspoon salt
1/4 cup all-purpose flour
2 teaspoons baking powder
2 tablespoons shortening
1/4 cup oil
1 cup warm water and a few tablespoons more if needed

Combine all dry ingredients in a bowl mix well then add shortening and the wet ingredients Knead for a few minutes until all ingredients are well-blended and you are able to form a ball.

Divide dough into 14 small balls. Keep dough covered with a damp towel I used a tablespoon leveled with the dough to get the same measurements.

Pat balls out to form a disc 4 to 5 inches in diameter and about 1/4 inch thick I used a tortilla presser.

Place gordita on a preheated griddle that has been preheated at 400° skillet or comal will do. Cook 2 to 3 minutes, flip over and cook 3 minutes more. Start warming up your oil in a small pot but big enough to fit the gorditas, now that you have cooked the gorditas on the griddle place the gordita in the hot oil and cook to a golden brown you will see it puff up right away noe flip to the other side and cook to a golden brown. Now on a paper lined plate stand the gorditas to drain. allow to cool a bit before cutting the slit. Fill with desired fillings.

Southern Pork Burrito

3 lbs. Pork
2 tsp. Knorr pollo
1 tsp. Black pepper
3 tbsp. garlic powder
2 tbsp. cumin powder
3 bay leaves
1 lemon squeeze juice into pot
1 orange... juice and orange goes into pot
1 onion
1 jalapeño
1/4 of a small can of green chiles

In a large pot add all ingredients above add water just enough to cover the pork, boil on high until pork comes out fork tender, once it is falling apart that you can pull apart with a fork shred all the pork, also shred the onion and the chile that was cooked with the pork place on a cookie sheet sprinkle with just a bit more of cumin and garlic mix well and broil in the oven for 10 minutes, let it cool off a bit before using in the burrito.

You will also need burrito tortillas, whole corn frozen or from a can, black beans, and Monterey Jack Cheese.

Asian Orange Chicken Ginger Soup






1 oz ginger root cleaned and sliced
4 tbsp soy sauce
1 tsp red pepper flakes
 5 skinless chicken breast
2 large oranges cut in half
2 tbsp. garlic powder
2 tbsp. knorr tomate
2 tbsp. knorr pollo
1 / 15oz. Tomato paste

 In a large pot add all the ingredients above, with the oranges before adding them squeeze the juices into the pot then add the squeezed oranges also to the pot, mix well and boil until the chicken is cooked all the way through with no pink showing. Pull chicken out and slice then add them back to the pot, I take the skin off but that is up to you.  Do not eat the oranges nor the ginger root it has a very strong bitter flavor when bitting into it...Serve on top of a bed if steamed rice drizzled with a bit of soy sauce.

Arroz con Pollo (Chicken and rice)





3 chicken breast boiled and sliced
1 chile jalapeno
1 tsp. Black pepper
2 c. rice
1 TBSP oil for toasting rice
4 oz. tomato sauce
4 c. Chicken broth or water +2 more after water has reduced
½ TBSP. Knorr Tomate Powder
½ TBSP. Knorr Pollo Powder
½ TBSP. Cumin Powder
½ TBSP Garlic Powder
¼ of a large Onion cut in half
1 of a large Bell pepper cut in half

Boil chicken till it's cooked all the way through no pink set aside to cool for a bit the cut into slices. Now
Heat oil in a large pot over medium heat add rice, stirring constantly, until golden brown. Add water, jalapeño, spices, Stir in onions, Bell pepper,  tomato sauce and broth bring to a boil. Add sliced chicken Reduce heat to low, cook about 18-20 minutes after browning once the water has reduced take off of the heat and cover and let the steam finish cooking it about 10 minutes.  Fluff with a fork.

CHILE RELLENOS



4 Poblano Peppers
8 ounces Monterey Jack Cheese (shredded or sliced)
4 large Eggs (room temperature and separated)
1/2 teaspoon salt
1/3 cup Flour
1 cup Oil

 To Prepare the Chilies:

Turn burners to medium-high heat place your skillet on top and wait about 5 minutes to heat up, once it heats up place Chiles on skillet and roast, turning occasionally with tongs, until blackened and blistered on all sides, about 5 to 7 minutes.
Remove to a large heatproof bowl; repeat with the remaining 2 chilies. Cover the bowl tightly with plastic wrap and let the Chilies steam until cool enough to handle, about 15 minutes. Using your hands, scrape away and discard the Chile skins, being careful not to tear the chilies; set them aside. Cut a slit lengthwise into the side of each pepper or cut the tops of and gently, remove the seeds and veins. Lightly flour the chiles then stuff each Chile, being careful not to tear them, with Cheese and Picadillo, set the Chilies aside. Place the Egg Whites and Salt in the clean dry bowl of a stand mixer fitted with a whisk attachment. Beat on high speed until stiff peaks form, about 1 1/2 minutes.
Remove the bowl from the mixer. Heat Oil in a pan dip each Chile into the egg white fluff covering all sides, gently place in the Oil to fry until golden brown, remove the Chile Rellenos and place on a paper towel to absorb all the oils.

Picadillo:

1 lbs. ground beef
3 large potatoes, peeled and diced
½ medium onion, diced
1 tbsp. garlic powder
1 tbsp. cumin
1tbsp Knorr tomate
1tbsp Knorr pollo
1tbsp. chili powder
1 small can 4oz. tomato sauce


In a large frying pan brown the meat and drain fat place meat back onto the stove add potatoes, and onions cook until onions are translucent,  add all the dry ingredients (spices) mix well, add tomato sauce to the mixture, stir well and add water about 2 inches cook until most of the water has evaporated. Taste for salt if needed add just a bit more salt,  cook for 10 to 15 minutes depending how high you have the heat on the stove or until most of the liquid has reduced it can take up to 30 minutes, just cook until potato is soft.

Homemade Waffles



2½ cups all-purpose flour 

1½ tablespoons baking powder
¼ teaspoon salt
1 TBSP. Sugar
1 tsp. Cinnamon (optional)
1/4 cup malt powder (optional)
3 egg yolks save the egg whites for later
2½ cups milk or any milk you like
1 tsp. Vanilla
2/3 cups melted butter
In a large bowl, combine flours, baking powder, cinnamon, sugar, malt powder, and salt mix well. In another bowl, beat egg yolks slightly, add vanilla, milk and Melted butter, now add wet ingredients to dry a little at a time and stir just until combined.  Beat egg whites until stiff peaks form, with a rubber spatula fold in egg whites into batter, do not over mix. Pour batter into your waffle maker, cook until golden brown or according to the waffle iron directions. Top with a dab of butter and your favorite syrup and enjoy with your favorite fruit coffee or juice and some bacon or sausage.

For strawberry topping

1 cup frozen berry melody mix
1/4 cup sugar
In a small pot add all ingredients smash with a smasher leaving a few chunky fruits cook until it thickeneds a bit and drizzle over the waffle 

For whipped topping 
1 small carton of heavy whipping cream 
1/4 cup sugar 
1/2 tsp. cream of tartar 
In a clean bowl pour all ingredients mix with a hand mixer or wisk until stiff peaks for spoon onto the waffle refrigerate unused cream

Chicken Fried Steak

5 lbs. Ground beef
1 tbsp. Knorr Pollo
1 tbsp. uncle chris
1/2 tbs. black pepper

For flour mix

3 c. Flour
1/2 tbsp. black pepper
1 tbsp. Knorr Pollo
1 tbsp. uncle chris

Wet mix

2 eggs
2 c. Milk

For gravy

1 can of cream of chicken
1/4 c. Oil
1/4 c. Butter
1/2 c.Flour
3 tbsp. Knorr pollo or more if needed
1 tbsp. Black Pepper
Milk start with a cup first then gradually add more as needed until you get the consistency on the gravy. Once you taste it and you need more salt then sprinkle a knorr pollo mix and add it until you get the salty flavor you like.

Cinnamon Rolls



4 c. All Purpose Flour
1 Package of Dry Yeast
¼ c. Granulated Sugar
1 tsp. Salt
¾ c. Whole Milk
¼ c. Water, warmed up to 115 degrees
¼ tsp. Vanilla
1 Egg
¼ c. Butter, melted
¼ cup of Melted Butter, to brush over the top before baking

For the Filling,

1/3 c. Butter, at room temperature
¾ c. Brown Sugar
¼ c. Granulated Sugar
1 1/2 Tbsp. Ground Cinnamon

For the Glaze,

¼ c. Cream Cheese, at room temperature
1 Tbsp. Butter, at room temperature
1 1/4 c. Powdered Sugar
½ tsp. Vanilla
3 to 4 Tbsp. Warm Milk

In a small bowl, combine the warm water and 1 tsp of the granulated sugar, sprinkle the yeast over the top and let it sit for about 5 minutes.

In the bowl of a standing mixer fitted with a dough hook, mix the egg, milk, salt, sugar and melted butter. Add 2 cups of the flour and the water, vanilla and yeast mixture, mix until its all incorporated and slowly add more flour. Turn the speed up to medium and let it mix for about 5 to 7 minutes or until you have a smooth dough.

Oil a large bowl with some oil and set aside. Take the dough out of the mixer and with your hands form a ball. Place it in the oiled bowl and oil the top of the dough with a little oil. Cover with plastic wrap and place it in a warm spot to rise for about 2 hours. I usually warm up a cup if water in the microwave for 3 minutes or warm up a small pot of water till it boils be careful not to burn yourself if warming up water in the microwave leave cup in there n place dough there to rise if using the pot of boiled water place it in the oven with oven off n place covered dough in there doing this will speed up tge rise of the dough.

Now while you wait for dough to ruse, In a small bowl, mix together the brown sugar, granulated sugar and cinnamon for the filling, set aside.

When dough doubles in size, punch the dough down and roll it out onto a floured surface into a 15x9” rectangle. Spread the soft butter over the top of the rolled out dough sprinkle evenly with the sugar and cinnamon mixture. Staring from one of the longer ends, tightly roll the dough into a jelly roll form. Cut into 14 to 16 slices I use unflavored  dental floss to cut the dough into slices (make sure they are even) and place them cut side down in a well buttered 9x13 baking pan. Cover with plastic wrap and let put them back into a warm spot to rise for another 1 ½ hours let ut rest next to the stove or on top since at this point you have to preheat your oven to 350 degrees.

Once risen, brush the rolls with some melted butter and bake them for about 30 minutes or until golden brown. While the cinnamon rolls cool for a few minutes make the glaze. Mix all the ingredients of the glaze in a bowl except for the milk, once the cream cheese is all mixed, slowly add the milk until you get a runny glaze consistency. Immediately pour the glaze over the cinnamon rolls. If you are saving the for later and want a warm cinnamon roll just lightly wet a paper towel n place over one of your cinnamon rolls and microwave it for a few seconds about 10 to 15 seconds.  Check in between to make sure you don't over heat it microwave temperatures are all different.

Banana Cream Cheese Bread

Ingredients

3 c. flour
1 tbsp.  Ground cinnamon
2 tsp.  Baking soda
2 tsp. Baking powder
1 tsp. Salt
2 c. Sugar
2 TBSP. Vanilla or banana extract
1 c. Or 8oz. Cream cheese, sour cream or plain yogurt
1 c. butter
4 eggs
6 medium riped Bananas
1 c. Pecans or Walnuts Optional

I use the Cream cheese, sour cream or plain yogurt, it helps the banana bread stay moist.

you can make it diabetic friendly buy changing the flour to wheat flour the sugar to Splenda the creams to a lite cream the banana has natural sugars so its friendly until you get to the banana

Broccoli Potato Cheese Soup

5 tablespoons butter, divided
1/2 onion chopped
1 tsp. garlic powder
2 cups potatoes diced
1/4 cup julienned to a cup carrots the more carrots you add the more carrot flavor you get
1 tsp. salt
1/4 cup flour
1 cups milk
1 15oz. Evaporated milk
1 container 32oz. chicken broth
1 bay leaf
4 cups broccoli florets
1 tsp. ground blk. pepper
Less 1/3 teaspoon nutmeg just a little more than a pinch
2 cups shredded cheese

Masa for tamales and how to make tamales

1 bag 4.4 lbs of masa harina
4 cups lard melted
Warm 1 gallon or 16 cups of broth or water
1/4 of each
Knorr Tomate
Salt
Ground Cumin
Ground Garlic no salt
Baking powder
Chile powder

Mix all all dry ingredients first then add the liquids mix well, refrigerate unused masa

First: Soak cornhusks
Place the dried cornhusks in a pan, bucket, dish or sink and cover with hot water, allowing husks to soak until soft and pliable husk, Softening cornhusks can take up to 30 minutes.

Make the masa (dough) by hand or an electric mixer, mix all ingredients in one bowl, mix well, dough should resemble a thick, yet creamy that is easy to spread. Fill the tamales with the meat of your choice,  I prefer pork, beans, chicken,  or turkey,  but the possibilities are endless.

Now remove husks from the water, drain in a colander pat dry.
Top each husk with 2 tablespoons of the masa or more, spreading dough into the bottom line half almost 3/4s full, you can use the back of the spoon to spread it or like me I  use a tortilla presser, spread it close to one of the long sides of the husk.
Spread about 1 pinky away from the other side
Now once you have spread the masa fill it with meat and Wrap the tamales rolling it up to overlap then fold the tail in, To make ahead, place the wrapped (uncooked) tamales in resealable freezer bags or airtight freezer containers and freeze them for up to 6 months. Steam them for 45min. To an hour. Can't wait then Prep the steamer which I use a pot with a metal plate with holes at the bottom Tamales are cooked in a steamer, or create your own steamer by using a Dutch oven fitted with a vegetable steamer basket or a metal rack inside.
Ok now  first Pour at least 1-1/2 inches water in the bottom of the steamer set something in the center like a ball of foil shaped like more like a rounded tall cone arrange the tamales standing  them upright in the pot around this foil cone shape foil, filling the space but not packing them tightly, wet a kitchen towel moist not soaked, cover the tamales on top loosely with this towel, then cover with the pot lid, halfway through add more water Steam tamales, bring the water to boiling, Steam the tamales until the dough pulls away from the cornhusks and is spongy and cooked through. Check the water in the pot occasionally, replenishing it as needed. This will ensure the steamer won't boil dry and scorch. You can freeze cooked tamales as well. Wrap with foil and place in a ziplock bag freeze tamales. When ready to cook them take them out of the freezer unwrap and  place tamales to steam this will take 45min. To an hour following the same instructions as before.

Sweet Cornbread



Sweet Cornbread

1⁄2 cup cornmeal
1 1⁄2 cups flour
2⁄3 cup sugar
1 tablespoon baking powder
1⁄2 teaspoon salt
1⁄3 cup oil
3 tablespoons melted butter
1 tablespoon honey
2 eggs, beaten
1 cups milk
1/4 chicken broth /stock

Preheat oven to 350º. Spray baking pan with non-stick baking spray.

In a bowl, combine all dry ingredients then add the wet ingredients, makes 3 mini loaves, or 1 large loaf, or 1 / 8 inch square.

Depending on the oven and also depends if you use metal or glass to bake the cornbread, it will take anywhere from 18 minutes to 40 minutes. Just check at 18 kinutes with a toothpick it should come out clean. I did the mini loaves that took  22 minutes
