Tacos de nopales con huevo (Cactus & Eggs Tacos)



4 tortillas
1/4 cup cooked nopales (Cactus)
1/4 cup onions
1 tbsp.. oil
1 chile jalapeno chopped and diced
a homemade salsa or picante sauce


warm up tortillas, in a pan over medium high add your oil, onions, nopales, cook until onions are translucent. once cooked add eggs cook until no longer runny add turn stove off and add salsa.

Turkey Dumpling




2 tsp. Oil
3 Tbsp. butter
2 tbsp. Knorr Pollo ...
2 tbsp. garlic diced very small
1 pack sliced carrots frozen
4 celery sticks sliced in 3 length wise and then slice to cubes
2 Tbsp. all purpose flour
5 1/2 c. chicken stock
1 tsp. sage
1 tsp. Dry thyme
1 tsp. pepper
2 bay leaves make sure to pull out before serving your dumpling soup
2 lbs. cooked turkey, cubed
1 sm. Bag frozen corn
16 oz heavy cream
1/2 onion diced
2 tbsp. Corn starch

For Dumplings with a whisk mix dry ingredients well then add butter mix the add milk combine with hand dump it over your dry counter knead until combined then roll out to about a 1/4 inch and cut out into small to medium size. Drop into soup later let them sit and rest while you do the soup.
1 cup all purpose flour
3 tps baking powder
1 tsp sugar
1/2 tsp salt
1 Tbsp. butter
1/2 cup skim milk
Make the Dumplings first and set aside for later.
Pour oil and Melt the butter over medium heat in a large pot, add the onions, carrots, celery, cook until soft, about 5 to 8 minutes then add garlic and cook another 2 minutes. Whisk all the dry ingredients except corn starch until fully combined and drizzle it into the pot over cooked veggies, cook about a minute mixing and stirring, slowly add the chicken stock, begin by adding only about a tablespoon at a time, only adding more stock once the stock you just added is combined, do about 5 tbsp. Now add corn stir and turkey and stir, mix well and then add the rest of the stock, save 1/2 of stock on the side add corn starch mix and set aside, towards the end you will be able to add it. Now set your heat on high and bring the soup to a boil until about four minutes uncovered, add heavy cream, stirring to combine and cook until it boils again once it starts to boil add the Dumplings spread around a few at a time so it won't stick stir add more and repeat until all the dough is all in cover and boil for 4 minutes uncover add the 1/2 cup of stock with the corn starch mix well cook for a minute and your done.

CHOCOHOLICs Dream Bundt Cake




1 tbsp. instant
2 c. sugar
1-3/4 c. all-purpose flour
3/4 c. Cocoa powder
1-1/2 tsp. baking powder
1-1/2 tsp. baking soda
1 tsp. salt
2 eggs
1 cup milk
1/2 cup oil
2 teaspoons vanilla
1 cup boiling water



Heat oven to 350°F. spray with a non stick spray for baking I used a round Bundt baking pan. 
Mix sugar, flour, cocoa, baking powder, baking soda and salt in large bowl sift all together then whisk, add eggs, milk, oil and vanilla; mix well, stir in boiling milk and water pour batter into prepared pan, batter will be thin.
Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely and frost or frost right away to have the frosting melt all over the bundt cake. Cool completely. Frost.



Frosting



1/2 c. (1 stick) butter melted
2/3 c. Cocoa
3 c. powdered sugar
1/3 c. milk
1 tsp. vanilla extract


Sift cocoa and powdered sugar add butter mix with a hand mixer then add milk if still to stiff add 2 more tbsp. of milk, add vanilla.

Tex-Mex-Migas-Chilaquiles



2 tablespoons oil
2/3 cup diced onion (about 1 small) optional
2 jalapeño peppers, seeded and minced 
optional 
Salt and pepper to taste4 corn tortillas, cut or torn into 1/2-inch pieces
8 eggs
1/4 cup salsa homemade or picante sauce
1 cup shredded cheddar 


               

Heat the oil in a large pan over medium heat until hot, add the onion and jalapeños, season with salt and pepper, cook until the onion is soft and translucent. Meanwhile, place the eggs in a bowl whisk set aside. When the onion is ready, add the tortillas and cook, stirring frequently, until soft, 1 to 2 minutes, reduce the heat add the eggs. Scramble until eggs are almost set, then add cheese and salsa remove from heat.

Meatloaf


2 lbs. ground beef
1 Tbsp. Oil
1 Onion, finely diced
 2 tbsp. Garlic, minced
4 Slices  of bread
½ cup of Milk
1 cup of cheese
2 Eggs
1 tbsp. Knorr tomate 
1/2 tsp.  Black Pepper
1 tsp. Cheyenne
1/2 tsp. onion powder
 Glaze
 1/8oz. tomato sauce
¼ cup of Brown Sugar
1 tsp. spicy mustard
1/2 tsp. of chili powder
1 tsp. of Granulated Garlic
1 tsp. of Granulated Onion
1/2 tsp. Salt
1/2 tsp. Cheyenne pepper


Preheat the oven to 325*.

 In a pan over medium heat, cook the onion and garlic in the  oil until soft and translucent, allow to cool completely.

 In a bowl, put the slices of bread cut up in pieces and milk mix well, let them sit until the bread soaks up all the milk.

 once onion mix is cool then add soaked bread, cooked onion and garlic, cheese,  eggs, and all the dry spices, mix until everything is well combined, now add the beef mix well do not compact the mixture. 

 Place a cooling rack over a baking sheet lined with foil sprayed with a non stick spray place meat mixture onto it and form it into a loaf, set aside.

 In a bowl mix together all the ingredients for the glaze. Smear half of it evenly over the top and save the rest.

 Bake the meatloaf for 50 minutes, then smear the rest of the sauce on top and put it back in the oven to bake for another 15 minutes.

Meatless Mexican Burrito


1 (15-ounce) can Black beans drained and rinsed
1/4 cup chopped fresh cilantro
1 c. regular corn or southwestern Corn canned or frozen
4 to 6  (10-inch) flour tortillas
1 Green bell pepper
1 (4.5-ounce) canned chopped tomatoes with green chiles
1 Onion chopped
1/2 lb.. mashed beans or a (16-ounce) refried beans
1 tsp. Chili powder
1 tsp. salt
1 tsp. black pepper
1/2 tsp. Cumin
1/2 tsp. Garlic
1 1/2 cups Mexican blend cheese
1/3 c. oil



 In a pot placed on stove on medium to high heat add 2 tbsp. oil, onions, and bell pepper and sauté till the onion is translucent, once the onion and bell pepper is cooked add the rest of the ingredients except refried beans  and oil, mix well and cook for about 5 to 10 minutes. 

Once mixture is done place tortilla on a flat surface, on the tortillas just below center of each tortilla, spread the refried beans, sprinkle with cheese, and black bean mixture, fold sides of tortilla over the filling then turn and overlapping one side and roll up to resemble a burrito.

Fry in 2 batches, in a clean dry pot add the rest of the oil and heat for 3 to 4 minutes, now slowly add the burritos so it doesn't splatter on you, brown to a pretty golden brown on each side or until browned and crispy, if it's getting to brown to fast lower the heat, and repeat for all the burritos. Pull out the burritos drain on paper towels.

Southwestern Salad


1 bag of any salad mix you like
1/4 cup corn
1/2 cup pico de gallo
1/4 cup black beans rinsed and drained
1/4 cup mozzarella cheese lite
1/4 cup of shredded spiced up chicken
2 green onions, thinly sliced, for garnish


You can Toss all ingredients together. Or place it in layers, drizzle avocado dressing over salad.

Avocado Dressing



2 avocados small or 1 large...
½ cup cilantro
1/2 tsp. garlic powder
1/2 tsp. Cumin powder
1/2 tsp. Salt
Squeeze one lime juice
½ cup plain yogurt
1/3 cup water


Blend all of the ingredients until smooth

Meatless Spaghetti with Veggies



1 (28 oz.) can diced tomatoes
1 2 tbsp. dried basil
1 2 tbsp. dried oregano
3/4 8 oz. fresh, chopped 
4 Cloves garlic minced
1 Onion medium chopped                                                              
1/2 cups vegetable broth
12 oz. fettuccine or Spaghetti pasta                                                   
1/4 tsp. red pepper flakes
1/4 Black Pepper
1/3 tbsp. olive oil                                                    
2 oz. Parmesan cheese
4 c. chicken broth

Add four cups of chicken broth to a large pot. Break the fettuccine in half  add it to the pot, then add tomatoes do not drained, olive oil, spinach, onion, garlic, basil, oregano, red pepper, and black pepper. Make sure the ingredients are submerged under the liquid, place a lid on pot, turn the heat on  high. Allow the pot to come up to a full boil over high heat then remove the lid and turn the heat down to medium. Allow the pot to continue to boil over medium heat, without a lid, for 10-15 minutes, or until the pasta is cooked and most of the liquid has been absorbed. Stir the pot every few minutes as it cooks to prevent the pasta from sticking to the bottom, but avoid over stirring which can cause the pasta to become sticky and mushy. After the pasta is cooked, add cheese over top and serve.

Chicken Fried Steak with Gravy



2 cup oil
6 (about 4-ounces each) ground beef patties pressed thinly

1 tbsp. Salt 

1 tbsp. Black pepper
1 tbsp.. Uncle Chris Spice
2 c. all-purpose flour
1 tsp. cayenne pepper
1 tsp. paprika
4 eggs, beaten
1/2 cups milk
 

 On medium-high heat place a pot and add oil let it heat up, you will know when the oil is ready and hot enough to use when you drop a little flour in and the oil bubbles a little.

 Now portion out the ground beef then press until they are about 1/4 to 1/2-inches thick.  In a rectangle dish add  flour and all the dry ingredients mix well. In another dish big enough to place your patties in, beat the eggs and milk, now run the patties through the flour, then egg mixture, then through the flour again.

Place the chicken friend steak carefully in the pot as the oil will splatter. Cook until golden brown, about 4 to 6 minutes on each side, if they are getting to brown and dark really fast lower the heat a bit.

When finished, place on a sheet tray lined with paper towels, hold in a warm oven and repeat with the other pieces of patties.

Pour gravy over the steak serve with a warm roll, mash potatoes, fried okra, French fries, fried mushrooms, buttery corn, salad, or any side of your choice.

CHICKEN GRAVY




1/2 c. butter or oil butter taste better
1/2 cup + 3 tbsp. all-purpose flour
1/2 tsp. black pepper
4 chicken broth unsalted
4 tsp. chicken bouillon


add salt if needed but the bouillons have lots of salt already

Combine water and bouillon in a heat proof container heat the chicken broth and bouillon in microwave 1 minute at a time, until it is steaming hot about 3 minutes, be careful when getting it out of the microwave it can burn you.

In medium pot- melt butter and add flour mix constantly on low heat, you will start to see it brown, once you see it brown add pepper and then you slowly add in liquid mixture – whisk constantly over low-med heat until bubbly & thickened keep on adding the liquid until the gravy is to the thickness or thinness you like.
