Puerco En Salsa De Chile para Gorditas

3 lbs. pork meat

5 single sticks of celery sliced and chopped

1 large onion sliced and chopped

1 bell pepper sliced and chopped

5 hatch chiles toasted and peeled and seeded

2 jalapenos toasted

1 large tomato chopped

1 c. water large (pork Broth)

1 tbsp. c. chili powder 

1 TBSP. Knorr Tomate

1 TBSP. Knorr Pollo

1 TBSP. Cumin Powder

1 TBSP Garlic Powder

1 TBSP tomato paste

4 oz. tomato sauce



In a Large pot add the pork-chops add water enough to cover above the chops, boil until pork-chops are done let it cool then cut pork-chops into small cube size ( save pork broth), now in another pot heat oil over medium-high heat add the meat, onion, celery, and bell pepper cook until the onion is translucent, then add the tomato and cook for about another 4 minutes, now add cumin, garlic, Knorr Pollo, Knorr Tomate, chili power, mix well, add water or pork broth. at this point you add the chiles make sure you blend the chiles before you add them to the pot, now let it cook for 30 minutes stir occasionally . Serve this meat inside a gordita or a flour tortilla add salsa, rice and beans on the side.

Best Homemade Chicken Tortilla Soup


2 Tbsp. of Vegetable Oil
1 Onion, chopped
3 Cloves of Garlic, minced
1 Jalapeno, seeded and minced
1 Green Bell Pepper
1 15 oz. can of Chopped Tomato Chili ready
1 15 oz. can of Black Beans
6 cups of Chicken broth from the chicken you boiled
1 Tbsp. of Chili Powder
2 tsp. of Ground Cumin
2 Tbsp. of Tomato Paste
1 tsp. of Dried Oregano
1 lb. of  Chicken breast
Juice of One Lime
½ cup of Chopped Cilantro
2 Large Tortillas sliced and fried to a golden crisp,

sour cream, green onions, avocado and shredded cheese.  (Optional) but adding this really makes the difference

 In a large pot add chicken and boil until done, once chicken is done (save the broth) shred the chicken be very careful it is super hot, if you buy boneless then place the boneless chicken in a deep bowl and use your hand mixer to shred the chicken (done in minutes), once you have shredded the chicken set aside and preheat your other soup pot add the oil and the chicken and the onion, bell pepper and jalapeno cook until onion is translucent, then add all the dry ingredients mix well, now add the rest of the ingredients Cook for about 45 minutes on medium heat.
Turn off the heat serve yourself this delicious tortilla soup topped with lime juice, cilantro,
shredded cheese Sprinkle the tortillas all over the top and top it with some sour cream, avocado.

Papas con Carne (Picadillo)

1 lbs. ground beef
3 large Russet potatoes, peeled and diced
½ medium onion, diced
1 tbsp. garlic powder

1 tbsp. cumin
1tbsp Knorr tomate

1tbsp Knorr pollo
1tbsp. chili powder
1 small can 4oz. tomato sauce

In a large frying pan brown the meat and drain fat place meat back onto the stove add potatoes, and onions cook until onions are translucent,  add all the dry ingredients (spices) mix well, add tomato sauce to the mixture, stir well and add water about 2 inches above the food. Taste for salt if needed add just a bit more salt,  cook for 10 to 15 minutes depending how high you have the heat on the stove or until most of the liquid has reduced it can take up to 30 minutes, just cook until potato is soft.

Homemade Lentil Soup

4 cloves Garlic
1 Onion chopped
4 Carrot(s)
4 stalks Celery
3 tbsp. Oil
2 cup Lentils
1 tbsp. Cumin
1 tbsp. garlic
1 tbsp. Knorr tomate
1 tbsp. Knorr pollo
2 qtr. Vegetable Broth
1 Bay Leaf
2 whole sprigs Thyme



Set a large, pot over medium high heat add  Onion, Carrots, Celery, and Oil to your pot and saute until browned and tender. Add garlic, cumin and the Lentils. Cook for a few seconds, until the lentils are nicely coated in oil. Add the broth and Bay Leaf and whole sprigs of Thyme. Cook until the lentils are tender, about 30 minutes or a bit more depending on how fresh the lentils are, take out the Bay Leaf and Thyme.

Homemade Peanut Butter Cups

16 oz. semisweet chocolate, chopped
1/2 cup creamy natural peanut butter
2 tbsp. butter, softened
1.75 oz. confectioner’s sugar (1/4 cup+2 tbsp.), sifted
12 cupcake liners



Line a standard 12 cup muffin tin with paper cupcake liners.
Melt the chocolate either in a double boiler distribute the melted chocolate into the 12 muffin tins only using half of the melted chocolate just filling the bottom of each cup, drop the pan repeatedly on the counter slowly, and the chocolate will flatten and smooth itself out. Place the pan in the freezer for 5 minutes 10 minutes, keep the chocolate on the boiler, in the meantime, whip the peanut butter, butter, and confectioner’s sugar together with a hand mixer until mixed, place small tablespoons of peanut butter into each cup I used a small cookie scooper , then press down softly so the peanut butter layer is flattened out. Place in the freezer for 5 minutes.  Use the remaining chocolate, and portion small spoonful's of chocolate onto the cups, one cup at a time, immediately dropping the pan repeatedly slowly on the counter to flatten each cup. chocolate will harden for the top layer very quickly, so you must flatten out the tops immediately after you pour the chocolate into each cup. Place the peanut butter cups in the freezer. Just peel of wrapper  and enjoy!

Buñuelos

Buñuelos

2 c. all purpose flour
1 tsp. of baking powder
1 tbsp. sugar
1/2 tsp. salt
1 egg
1 tbsp.. butter (melted and already cool)
3/4 c. warm water (Anise tea)
1 tsp. vanilla
2 c. vegetable oil to fry the Buñuelos

Sugar n Cinnamon mixed in a large flat deep to dish to dip the Buñuelos straight out from being fried.

Anise tea is very often used instead of water, To make anise tea, place 1 1/2 cup of water in a small saucepan. Bring the water to a boil, add the anise seeds and set aside to cool. Strain and use the amount needed to make dough.

Piloncillo Syrup for Buñuelos:

3 1/2 c. water
1 large piloncillo stick (about 12 oz.)
2 cinnamon stick
1/3 tsp. anise seed

Place  water and piloncillo in a medium size saucepan. Heat over medium high heat until the piloncillo dissolves.

Add the rest of the water, cinnamon stick,  anise bring to a boil. Cook for about 6 minutes, stir and boil for 4 more minutes. Set aside to use as topping for the Buñuelos.

If you want a thicker consistency, simmer for a longer period of time until desired thickness

Instructions:

In a large bowl mix flour, baking powder, 1 Tablespoon of sugar and 1/2 teaspoon of salt.

Form a well in the center and add the egg, melted butter and vanilla. Mix until mixture resembles a coarse meal. Slowly add the water or anise tea a tablespoon at a time, mixing and kneading until you have a soft and smooth dough. This will take less than 5 minutes. Cover the dough with a kitchen towel and let it rest for 30 minutes.

While the dough is resting prepare your working area with a rolling pin, a large dish with paper towel or open paper bags, extra flour for rolling the circles, a large frying pan with the oil ready for to start frying the Buñuelos.

Divide the dough in 12 small balls and cover. Heat 3/4 inch of oil in a large frying pan.

Place one of the dough balls in your floured working surface and stretch with your rolling pin. Roll out each ball to forma a circle as thin as possible.

Fry the Buñuelos in hot oil until they are golden brown. Dip the Buñuelos into the sugar n Cinnamon  right away  while still  warm so that the sugar sticks to it.
