1 1⁄2 cup cornmeal
3 cups flour
2 cup sugar
3 tbsp. baking powder
1 1⁄2 tsp. salt
1 cup oil
9 tbsp. melted butter
6 eggs, beaten
3 cups milk
3/4 chicken broth /stock
Preheat oven to 350º. Spray baking pan with non-stick baking spray.
In a bowl, combine all dry ingredients then add the wet ingredients, makes 9 mini loaves, or 3 large loaf, or 3 / 8 inch square.
Depending on the oven and also depends if you use metal or glass to bake the cornbread, it will take anywhere from 18 minutes to 45 minutes. Just check at 18 minutes with a toothpick it should come out clean. I did the mini loaves that took 22 minutes
