2 lbs. ground beef
½ c. onion diced
1/2 c. Shredded carrots
1/4 c. barbecue sauce
1 tbsp. garlic salt powder
1 tbsp. Garlic powder without salt
1 tbsp. Onion powder
1 tbsp. black pepper
1/2 tbsp. Italian seasoning
1 c. Bread crumbs
8 strips raw bacon
2 tbsp. Butter
1 disposable large loaf pan
In a medium pan on medium heat add butter, onions, and carrots, saute until onions are translucent, set aside let them cool while you get all the other ingredients together.
On a cookie sheet add all the spices and the bread crumbs mix well once mixed then add the cooked onions and carrots mix well, now add the raw ground meat mix until well combined.
Once it's all mix form into a roundish rectangle looking like a loaf of bread shape.
Grab one bacon and wrap one end of the smaller side of the loaf do the same at the other side, Lay the strips of bacon in a row to cover the top of the meatloaf, each one slightly overlapping the piece before it, until you reach the other end.
Once you have finished wrapping the meatloaf use to long spatulas lifting from each end and placing it into the loaf pan cover with foil and seal it...
Make sure you have your BBQ smoker ready to smoke your meatloaf.
Place meatloaf in the smoker an cook for one hour, then uncover drain the fat be careful not to burn yourself, cook uncovered for an other hour.
This is what it looks like after two hours of smoking, the bacon looks raw but the meat is cooked inside.. The other things you see in the picture is bacon wrapped corn on the cob.
Now once the two hours have gone by pull out the meatloaf and set on a cookie sheet in the center rack of your oven, set your oven on broil and broil on both settings keep an eye on it might anywhere from 3 to 5 minutes to broil and make the bacon crispy once the bacon is crispy pour the bbq sauce on top and turn the oven off leaving the meatloaf in there for about 5 minutes. That's it your done.
Serve with a salad and corn on the cob.
Cut into 8 to 10 even slices and serve.
