Turkey Gravy

1/2 c. butter or oil butter taste better...
1/2 cup + 3 tbsp. all-purpose flour
1 tsp. powdered garlic
1/2 tsp. black pepper
4 c. Of liquid mixture
1/30oz. can chicken stock
5 sticks Celery
1/2 onion
Save the turkey neck & the bag of the insides of the turkey
1/2 tbsp. Sage
1/2 tbsp. poultry seasoning
1/2 tbsp. pepper

In a pot add the turkey neck & the insides of what's in the bag of the turkey, onion, celery, sage, pepper, and poultry seasoning. Boil until the turkey neck is done. Once it's done to this you will add a cup of chicken stock and the turkey drippings m I x and let it rest for a bit the fat of the turkey will rise spoon out the fat as much as possible keep the rest of the liquid. Now
drain the liquid mix through a fine strainer, set aside. Now In medium pot- melt butter and add flour mix constantly on low heat you will start to see it brown, once you see it brown you slowly add in liquid mixture – whisk constantly over low-med heat until bubbly & thickened keep on adding the liquid until the gravy is to the thickness or thinness you like.
