Chocolate Covered Strawberries


















Chocolate Covered Strawberries

8 ounces chocolate coating, chopped or broken up in pieces

1lb. strawberries chill in the freezer for 3 minutes

Directions

Step 1 Place chocolate in a heatproof glass bowl set over (not in) a pot of gently simmering water. Stir just until melted with 1 TBSP. oil or you can melt it in the microwave 30 second increments stir and keep on warming it up until smooth creamy and melted.

Step 2 Line a baking sheet with waxed paper. Dip strawberries, one piece at a time, in chocolate, spooning on additional chocolate to cover if needed place on the wax paper then Refrigerate until chocolate is firm, about 1 to 3 minutes in the refrigerator.

Beef Nachos



Beef Nachos

 (15oz.) can refried beans

2 lb. ground beef (the amount is up to you)

1 teaspoon ground cumin

1 teaspoon ground Garlic

1 teaspoon Knorr Tomate Powder

1 teaspoon Knorr Pollo Powder

¼ c. tomato sauce

½ c. water

 1 c. (4 oz.) shredded cheddar cheese

1 ½  c. lettuce, shredded

 1 medium tomato, diced

 ½ c. onion, chopped

1 bag of plain corn tortilla chips

Sliced Jalapenos (optional)

¼ c. cilantro (optional)

 ¼ c sour cream (optional)

¼ c guacamole or ½ sliced avocado (optional)

1 c. salsa or pico de gallo (optional)


Directions:

Brown the ground beef and ¼ c of onions sauté together, then drain add ¼ cup of water add water as needed at the end the meat needs to be moist but not dripping of juices, add tomato sauce, spices and simmer for about 5 minutes.

Warm up the refried beans spread on the corn chips then Spoon the meat mixture evenly onto corn tortilla chips Top with lettuce, tomato, onions, cilantro, cheese, sour cream, Sliced Jalapenos and guacamole and whatever other items you want to put on top sprinkle all over.

Homemade Creamy Cheesecake

























Creamy Cheesecake

CRUST 

2 c.  Finely ground graham crackers (about 30 squares)

1/2 tsp.  Ground cinnamon

1/2 c.  Butter, melted (1 stick)

FILLING 

4- (8) oz. Blocks cream cheese, room temperature

1 c. Sugar

4 Eggs room temperature

1 1/2 tsp.  Vanilla extract

1 c. Sour cream


TOPPING 

Strawberry Glaze that I bought at the store.  Chocolate Covered Strawberries drizzled with chocolate.


Directions:  Preheat oven 325*

 Preparing crust: In a mixing bowl, combine the crust ingredients together until evenly moistened, lightly coat the bottom and sides of a 9-inch spring form pan with non-stick cooking spray, firmly press the mixture over the bottom and 1-inch up the sides of the pan, and Refrigerate the crust while preparing the filling  

Preparing filling: In a large bowl, beat the cream cheese on low speed for 1 minute just until smooth and free of any lumps, Gradually add the sugar and beat until creamy, 1 - 2 minutes every so often scrape down the sides of the bowl, add the eggs 1 at a time, continue to slowly beat until combined. Stir in the vanilla now the sour cream. The batter should be well mixed, but not over beaten. (Over beating incorporates too much air and will cause the cake to puff when baking, then fall and crack when cooling.) Pour filling into the crust-lined pan and smooth the top with a spatula, or pound it on the counter lightly to get any air bubbles out.

Preparing water bath: Set the spring pan on a double piece of aluminum foil and fold up the sides this will prevent water from seeping into the seams of the spring form pan. Carefully set the cake pan in the large roasting pan or a 1 inch cookie sheet, I warm up my water in the microwave before I pour it into the bottom of the cookie sheet. Pour water into the roasting pan or a 1 inch cookie sheet until the water is about 1 inch or halfway up the sides of the cheesecake pan, I place the cookie sheet in the oven first then add the water just a little at a time then place the cheesecake in the center and add more water if needed.

Preheated oven is at 325*, you need to decrease the oven to 300 bake the cheesecake for 1 hour & 20 min. The cheesecake should be a beautiful golden brown and jiggle; it will firm up after chilling. Be careful not to overcook! Do not do a toothpick test in the cakes center, this will make a crack. Loosen the cheesecake from the sides of the pan by running a thin metal spatula around the insides of rim. Let it cool in the pan for 30 minutes. Chill in the refrigerator, loosely covered, for at least 4 hours to set up. De-mold and transfer to a cake plate. Slice the cheesecake with a thin knife that has been dipped in hot water and wiped dry after each cut. Enjoy just as it is creamy or add your favorite toppings. I cut into the cheesecake before it was completely firm, I couldn't wait.

Carrot Cake



























Carrot Cake

4 eggs

1 1/4 cups vegetable oil

2 cups white sugar

2 teaspoons vanilla extract

2 cups all-purpose flour

2 teaspoons baking soda

2 teaspoons baking powder

1/2 teaspoon salt

2 teaspoons ground cinnamon

3 cups grated carrots

1 cup coconut grated from a bag

1 cup chopped pecans + 1 cup for garnish (optional)

1/2 cup butter, softened

8 ounces cream cheese, softened

4 cups confectioners' sugar

1 teaspoon vanilla extract

Directions

1.    Preheat oven to 350* Spray two 10 inch round baking pans with a nonstick baking spray. Depending on altitudes and ovens the temperatures will vary. 

2.    In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla mix well.  In a separate bowl Mix  flour, baking soda, baking powder, salt and cinnamon, then add to the wet ingredients, fold in carrots, coconut, and pecans. Pour into prepared pan.

3.    Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

4.    For Frosting: In a medium bowl, combine butter, cream cheese, then confectioners (sifted) sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. frost cake once it’s completely cooled. Frost and garnish with pecans. Refrigerate
 Look at all that delicious
ness of those carrots topped with a homemade buttery cream cheese and pecans. Who can resist?

Ceviche

Ceviche


½ lb. boiled jumbo shrimp cooled

1/2 cup of fresh squeezed lemon juice

1/2 onion, finely diced

1 cup of chopped fresh tomatoes

1 Serrano chili, finely diced

2 teaspoons of salt

¼ cup cilantro loosely placed in the cup do not press it down

1 Avocado cubed

In a non-reactive dish, I use a Pyrex dish; place the cooled boiled shrimp, onion, tomatoes, chili, salt, and cilantro stir until well mixed then add Avocado fold in slowly . Cover with lemon juice. Let sit covered in the refrigerator for an hour, then stir, making sure more of the shrimp gets exposed to the lemon juices, Let sit for several hours, giving time for the flavors to blend.

Baked Croissant Taco Ring

Baked Croissant Taco Ring

Ingredients:

2 lb. ground beef

1 teaspoon ground cumin

1 teaspoon ground Garlic

1 teaspoon Knorr Tomate Powder

1 teaspoon Knorr Pollo Powder

¼ c. tomato sauce

½ c. water


1 c. (4 oz.) shredded cheddar cheese

2 8-oz packages refrigerated crescent rolls

1 ½
 c. lettuce, shredded

1 medium tomato, diced

½ c. onion, chopped

½ c. sliced black ripe olives

¼ c. cilantro

¼ c sour cream

¼ c guacamole or ½ sliced avocado

1 c. salsa or pico de gallo (optional)


Directions:
–Preheat oven to 325°. Brown the ground beef and ¼ c of onions sauté together, then drain add ¼ cup of water add water as needed at the end the meat needs to be moist but not dripping of juices, add tomato sauce, spices and simmer for about 5 minutes.

–Unroll the crescent dough; separate into triangles. Arrange triangles in a circle on a pizza pan with the wide ends toward the center of the pan, overlapping each other. It will look like a large sun with the points hanging half off the pan. There should be a 5 or 6 inch opening in the center.

–Spoon the meat mixture evenly onto widest end of each triangle in a circular shape to form a donut shape once this is done sprinkle some cheese, Bring points of triangles up over filling and tuck under wide ends of dough. (Filling will not be completely covered).

–Bake 18-22 minutes or until golden brown.

–Top with lettuce, tomato, onions, cilantro, olives, cheese, sour cream, and guacamole and whatever other items you want to put on top. Place them in center of the taco ring or sprinkle all over.

Boneless Chicken Mole


Chicken Mole
Ingredients

3 large chicken breast pieces, no skin, boiled and shredded, reserved chicken broth use as needed

2 ounces semi-sweet chocolate, chopped depends on which one you buy some come in individually wraps squares I use one of those squares

2 tablespoons peanut butter

1 (8.25-ounce) jar DONA MARIA mole

½ TBSP. Knorr Tomate Powder

½ TBSP. Knorr Pollo Powder

Add a little bit of salt to your liking I don’t use salt since my spices have salt
Directions
Boil chicken once boiled pull out the chicken let it cool down a bit then shredded it up or cut into cube sizes. In a medium size pot place all of DONA MARIA mole with 1 cup of the chicken broth, chocolate, peanut butter, and spices, mix well and keep on adding the chicken broth until you like the thickness of the sauce, once the sauce is to where you like it then add your chicken. You can have the chicken in bigger sizes or a whole chicken with bone in cut into portions and skin on, but I like chicken breast and shredded. Mix the chicken really well let it absorbs the sauce. Serve with a side of beans and a side of Mexican rice.
