Soft Fluffy Homemade Dinner Roll








A little tip so you can have fresh rolls anytime.

When the first rise (poof) of the dough is done follow the steps as instructed below but instead of greasing up a cookie sheet for a second rise instead shape your dough balls place on a cookie sheet a finger apart and freeze for an hour. Once the dough balls are frozen grab a freezer Ziploc bag add toss all the frozen dough balls in the bag and freeze. When you're ready to bake the rolls just pull out the frozen dough balls and place on a greased cookie sheet a finger apart cover with a loose plastic wrap (spray with non-stick spray) and then cover with a towel, place in a warm area of the kitchen to let them rise (double in size) since they are frozen the rise will take longer. Enjoy fresh rolls anytime. These will last good in the freezer up to two months if you wrap them yourself or up to 6 months if you use a sealer machine.

3 ¼ cup of flour

½ tsp. Salt

2 tsp. yeast

1 Egg

1 cup of Warm water

¼ cup of Sugar

¼ cup of Oil


When dealing with yeast breads, it is important that your water be warm but not hot. A good rule of thumb is to think “baby bath water”, that is the temperature you are going for. If you’ve ever given a baby a bath, you know exactly what I’m talking about :). If you haven’t given a baby a bath before, go for good and warm but not hot, just a little above lukewarm. Let your yeast sit for five minutes and make sure there are some little bubbles on top, that means your yeast is alive and active.

I made mine in the bread machine, there is a certain way you place the ingredients in the machine so the first thing you pour in the machine is eggs, mix with fork, sugar, salt, mix with fork, water, oil, flour, and the yeast. Set your machine on dough let the machine do it's job...


After it's ready from the machine pull out and knead about 10 times then shape your dough balls and place on a greased cookie sheet a finger apart spray with nonstick spray cover loosely place in a warm place let it rise until double in size about an hour to an hour and a half then brush lightly with milk very little bake until golden brown.

To your Mixer add your yeast, warm water  salt, and sugar mix well wait 5 minutes, you should see foaming after 5 minutes, then add 1 cup of flour mix well then add another cup of flour mix and add oil, and the egg mix well as it is mixing add the last cup of flour let it mix for 2 minutes if mixture is still sticky then add the remainder of the flour a little at a time mix about 30 seconds pull the dough off of the hook put all of the dough on your counter, knead the dough 10 times, spray a bowl with a non-stick spray place dough in that bowl and spray dough lightly with the non-stick spray, cover the bowl with cling wrap and a cloth let it rise for about an hour to an hour and a half until it doubles in size, what I do is warm up a cup of water for 3 minutes in the microwave and leave it in the microwave and set the dough to rise in there, the warmth of the cup of water helps it rise. Once the dough rises place the dough on your counter and knead it 8 times then with your hands  pull about 12 equal parts, shape each piece into a ball and place in a baking dish/ cookie sheet that has been sprayed with a non-stick spray make sure the dough balls are touching each other now let the dough rise again for about 20 to 30 minutes if they are not rising fast enough again warm up a cup of water and leave it in the microwave like before. Once the dough balls have raised (doubled in size) brush with a little but on top then bake in a preheated oven at 350* for about 15 to 20 minutes or until golden brown. As soon as they come out butter the top of the rolls with a little melted butter try not to burn yourself trying to eat them right out of the oven...

Tacos De Nopales con Huevos (cactus & egg Tacos)

Ingredients

1/3 cup nopalitos (about 1 chopped nopal - cactus paddle)                
1/8 teaspoon salt
1/8 teaspoon black pepper
4 (6-inch) corn tortillas  or flour                         

3 egg
Preparation

In a medium size pot Let water boil first, once it boils pour in the small package of  nopales into the boiling water for 15 minutes. Drain be careful not to burn yourself, pat dry. Heat a medium nonstick skillet add 1 tbsp. of cooking oil over medium heat. Add nopales sauté for 2 minutes or until you start to see them toast just a bit. Combine eggs   pepper, and salt stir it into the pan of sauté nopales cook until egg is well done. Warm the tortillas Spoon about 1/2 cup egg mixture onto each tortilla. Top with salsa


 Enjoy.

Two differant ways of making Homemade Flour Tortillas



ingredients

2 cups all purpose flour
2 tsp. salt
2 tsp. baking powder
3 Tbsp. shortening
3/4 cup hot water more like a hot cup of coffee or bit more hot, be careful you don't burn yourself 

Instructions


Mix flour, salt, and baking powder together with your hand. Add shortening and continue mixing until mixture resembles coarse crumbs. Make a well in the center of the mixture and add the water Slowly mix all the ingredients until dough starts to form. Place dough on a floured surface and knead for several minutes until dough is nice and smooth. Cover and let rest for 15 minutes. Divide dough into quarters and then each quarter into thirds for a total of 12 portions. Roll out each portion into a 6-7 inch circle. Cook the tortillas in a medium to medium high heat on a flat grill or a pan, I don't advice using an electric grill they don't heat up enough, for about two minutes on each side or until puffed or you start seeing those lightly browned spots appear. Remove to a tortilla holder or a plate and cover with a towel or in foil to keep warm. Time to Enjoy these delicious Warm Tortillas with Butter yuuuummmmmyyyy in my tuuummmmyyy





or you can try this recipe these stay softer longer
Tortillas
3 & if needed add a 1/4 c flour
2 tsp. Salt
3 tsp. Baking powder ...
1/3 c. oil
1 c. hot water warm it up in the microwave for 2 1/2 min.



Mix the flour, salt and baking powder in a large bowl. Add the oil and water mix well until the dough forms a ball. Place the dough on a lightly floured surface and knead for 3 to 5 minutes or until dough is smooth. Add a little more flour if it is too sticky. Let the dough rest for 15min. Before working with it... Divide the dough until you have about 16 pieces roughly the same size. Shape the dough into small thick Frisbee like pancake shape
Cover the dough pieces with a clean kitchen towel and allow them to rest for 5 minutes. Heat skillet or a large pan over medium-high heat. Working on one at a time, roll out each dough piece on a lightly floured surface. Try to get them nice and thin, with each roll out rotate the dough until you have it rolled out. Place it onto the skillet or hot pan and cook for 1 minute or until a few golden brown spots appear on the underside. Some bubbles will also start to form on top. Flip the tortilla over and cook for another 30 seconds. If the tortillas are browning too fast, turn the heat down a little. Remove the tortilla from the skillet/pan and place in foil or covered container if placing in a container let them cool if not they will sweat. Repeat the steps with the remaining dough
