Diabetic Friendly Chocolate Wheat Cake: & Chocolate Pudding like Frosting Ganache: & Chocolate Ganache

































This Cake and Ganache can be made into a regular sinful flavors so I included both the regular ingredient and the Diabetic Friendly Version. Enjoy.

Diabetic Friendly Chocolate Wheat Cake: & Chocolate Pudding like Frosting Ganache:

2 cups granulated white sugar / Splenda

1 3/4 cups all-purpose flour / wheat

3/4 cup unsweetened cocoa powder (natural or Dutch-processed)

1 1/2 teaspoons baking powder

1 1/2 teaspoons baking soda

1/2 teaspoon salt

2 large eggs / substitute eggs

1 cup water or coffee

1 cup regular milk/ low-fat

1/2 cup canola oil / olive

1 1/2 teaspoons pure vanilla extract

In a medium bowl sift and mix all dry ingredients, in another medium bowl mix all the wet ingredients mix well.  Now add the wet ingredients to the dry mix, with a whisk mix well. Now this cake (Diabetic) will not rise to high so you can use two smaller cake pans to make it a taller cake or you can use larger pans but this cake will come out thin I made mine on 2 / 10x3 round pans and added 2 cups of batter to each pan, baked at 325 degree for 10 to 12 minutes.  Let cool, then spread the Ganache in the center of both cakes and the top and enjoy with milk or coffee well just enjoy.


Chocolate Pudding like Frosting Ganache:

1 cup of fat-free milk Regular Milk

1 to 5 tbsp. Splenda depending on how sweet you like it you can add a bit more or less it’s up to you. Regular Sugar

1 tsp. vanilla

2 tbsp. cocoa powder unsweetened

2 tbsp. of Smart Balance Heart Right Butter  / Regular Butter

In a medium pot add all of the above ingredients, mix well over medium heat until it thickens. Once it has thickened place pot on a cool bath of ice water to cool the pudding Ganache down. Once it has cooled spread a thin layer on the bottom half of cake then the rest on the top layer enjoy.
Chocolate Ganache
1 cup heavy whipping cream
8 ounces semi-sweet chocolate, chopped
1 teaspoon vanilla extract or any flavor you desire (optional)
1 tablespoon corn syrup for extra sweetness (optional)
¼ cup Powdered Sugar/ Icing Sugar same thing sifted (optional)
Directions
Add heavy cream to a microwave safe bowl and heat on high for 1-2 minutes until cream is hot. Add the chopped chocolate to a separate bowl. Pour hot cream over chocolate add flavoring and corn syrup and or powdered sugar  if you like and let it sit for a minute or two so the chocolate begins to melt. Stir continuously until chocolate turns to a smooth cream.  Once it has been all incorporated let it sit for about 5 minutes before using.
Store leftovers covered in the refrigerator. To reuse heat in the microwave for 30-second intervals until chocolate is smooth and creamy.

Easy Peasy Delicious Donuts














They are so soft and delicious, cinnamon donut holes, regular glazed donuts, and chocolate ganche drizzled with white chocolate.

Donuts
1 can biscuits any brand mine were the Grands Flaky Biscuits
1/2 inch oil in a large pan I have a deep fryer so that's what I used

Pour about 1/2 inch of canola oil in a large, high-sided skillet.  Heat oil to about 350 degrees.
Open biscuits, Using a donut cutter, or use well I used a decorating tip to cut the holes in the center of the donut, cut a hole out of the center of each biscuit, and don't toss the holes make donut holes out of them and sprinkle with the cinnamon mixer. Fry doughnut until golden brown on both sides set on a paper towel to drain any extra oils. Sprinkle with cinnamon mixture or dunk them into your favorite glaze. Enjoy.

 Cinnamon Mixer
1/2 cup sugar
1 teaspoon cinnamon
Mix until well incorporated set aside

Chocolate Ganche
2 oz. whipping heavy cream
2 oz. semi-sweet chocolate
1/4 cup powder sugar
1 tsp. vanilla extract
Place the chocolate into a small bowl. Heat the cream in a small in the microwave for about 1 min to 1 and 30 seconds. chopped chocolate pour into the hot cream  and whisk until smooth. Stir in the vanilla and sugar Whisk well, set aside. Allow the ganche to cool slightly before dunking the donuts into it.

Now for the simple glaze I used 1/2 cup of powdered sugar and poured the heavy cream a little at a time not to much it will be runny so just until you get it a little thinned out to cling onto the donut. whisk until smooth, dunk your donut. set all your donuts out to let the glazes set just a little while so that you don't burn your mouth.

Easy Biscuit, bacon, and egg, nest

All you need is

1/ 8 count refrigerated Biscuits ant brand I use Grands Flaky Biscuits
8 small eggs
8 slices of cooked bacon any brand
1 muffin pan
8 / 4 x 4 cut waxed paper sprayed with a non-stick baking spray

preheat oven to 325 degrees

line the muffin pan with waxed paper that has been sprayed already, pull apart your biscuits and roll out just a little and tuck into the muffin pan in the inner side of the biscuit line with one of your cooked bacons then add your raw egg place on top of a cookie sheet because the biscuits will expand and a little might spill over baked until you like the way the egg looks about 10 minutes or longer depending on how runny you like your eggs. serve hot.

3 chicken breast, save the broth from the chicken after it has boiled.

1 bag of frozen mix steam veggies warm up to the package directions.

1 32oz. cream of chicken soup

Boil chicken until soft and cooked all the way through (about 30-40 minutes). Cut or shred chicken into small pieces. In another pot warm up the cream of chicken dilute with the chicken broth once it is all warmed up add your shredded chicken and veggies stir until mixed well, pull apart your biscuits and place on a plate top with your chicken mixture serve warm. I served mine with wild rice also steam bag from the frozen isle.

Homemade Easy Peasy Baked Chicken

4 Chicken Breast

Lemon Pepper Seasoning

Uncle Chris Steak Seasoning

Cayenne Pepper

Garlic

Preheat oven to 350 degrees

In a baking pan place chicken and spray chicken with a nonstick spray sprinkle with all of the spices from above, bake until well done, Chicken will take about 35 to 45 minutes. To check chicken for doneness, prick with knife and press to see if juices run clear, if so then the chicken is done. Remove from oven and Allow chicken to rest for 10 minutes before serving. I served mine with some can green beans and a buttery creamy chicken flavor rice. I drizzled cream gravy over the baked chicken.

Homemade Chocolate Chip Cookies




Homemade Chocolate Chip Cookies

Makes about 40 cookies depending on the size you scoop onto the cookie sheet.


2 1/3 cups all-purpose flour

1/2teaspoon baking soda

1/2 teaspoon baking powder

 1 teaspoon salt

2 sticks or (1 cup) butter, at room temperature

 1/2 cup plus 4 tablespoons granulated sugar

 1/2 cup plus 4 tablespoons packed brown sugar

 1 teaspoon vanilla

 2 large eggs

1  12oz bag semi-sweet chocolate chips

Preheat oven to 350°F. Line baking sheets with wax paper..

In a medium bowl combine the flour, baking powder, baking soda, and salt. In the bowl of an electric mixer beat the butter, granulated sugar, and brown sugar until creamy, about 2 minutes. Add the egg and vanilla, beating well to combine. Gradually beat in the flour mixture. Stir in the chocolate chips. Scoop 1 1/2 tablespoon-sized balls and place onto prepared baking sheets.

Bake for 9 to 11 minutes, or until golden brown. Cool for 2 minutes before removing to wire racks to cool completely

These cookies are a little crispy on the edges and soft in the center

Homemade Garlic Bread and Spaghetti with Meat Sauce



1 - 16 oz. package of spaghetti, cooked according to the directions on the package.
1 Medium Onion, finely chopped2 (28oz) Cans of Tomato crushed Italian herb flavor
2 small can of tomato paste Italian herb flavor
1 (8oz. tomato sauce)
1 lb of  Italian sausage 1 lb of ground beef

2 tbsp. knorr tomate 
2 tbsp. Italian spice mix
2 tbsp. garlic powder
2 tbsp. onion powder
2 tbsp. black pepper powder
2 tbsp.  dry oregano
1/2 cup of cheddar cheese and 3 tbsp. parmesan cheese fresh or powder
1 small container of sliced mushrooms (Optional)


I do not add salt because the knorr tomate has salt in it so once you taste the sauce you can add more knorr or salt it's  up to you.


              
 In a large pot over medium high heat,  Add the ground beef and Italian sausage cook until its pretty much all cooked through. Remove from the pan with slotted spoon drain all the fat, now add the meat back to the pan and add the onion cook until the onion is translucent.
Add all the dry spices mix well then add the wet ingredients and 1/2 cup of water mix well then bring to a boil and reduce the heat to medium low, cover it and let it cook for 30 minutes to an hour Stir from the bottom up every 5 minutes. The last 5 minutes of cooking add 1/2 cup of cheddar cheese and 3 tbsp. parmesan cheese fresh or powder whatever you like, it really makes a difference in flavor.

Garlic Toast

Melt butter in the microwave for about 15 sec. add garlic and parmesan cheese. Rub onto the bread place in a cake pan and bake at 350 degrease for about 2 minutes or until golden brown.

Pour sauce over spaghetti, sprinkle with Parmesan cheese, serve with Buffalo wings and your garlic bread and Enjoy oh oh oh and a yummy salad.

Homemade Big Chicken Nuggets

Homemade Big Chicken Nuggets

3 boneless skinless chicken breasts

1 tsp. (heaping) of onion powder

4 tsp. (heaping) of Lemon pepper

2 TBSP. (heaping) Uncle Chris Steak Seasoning + 2 tsp.

2 cups of Panko Bread Crumbs

3 eggs, beaten

2 cups of flour

2 cups butter milk

Boil your chicken breast until it is cooked all the way threw, pull out and cut into the desired size for your nugget Transfer chicken to a bowl add buttermilk and 2 tsp. Lemon pepper & 2 tsp. Uncle Chris Steak Seasoning mix and let it rest for 20 minutes. Meanwhile Heat oil in a deep fryer to 350 degrees, Combine all the dry ingredients in a small bowl mix well except for the flour and the panko. Whisk eggs together in a bowl set aside. In another wide bowl combine the flour and half of the spices mix well. In another wide bowl combine Panko and the rest of the spices mix well. Pull chicken out a nugget at a time and Coat with the flour mixture then dip it in the egg, then dip into the panko and place slowly into the hot oil cook until golden brown. Remove to a paper towel-lined plate (to catch any excess oil). Enjoy I served mine with Spicy Mexican Corn, and mashed potatoes, and Country gravy.

Pot Roast in a Slow Cooker


Pot Roast in a Slow Cooker

1 pot roast (rump or lean chuck), about 3 to 4 pounds

1 large onion sliced

4 single stalks of celery sliced to about an inch wide

1 large bell pepper

1 small bag of mini carrots

3 large potatoes cut in 1-inch slices

2 TBSP.  Ground Garlic

2 TBSP. Knorr Tomate Powder

2 TBSP. Knorr Pollo Powder

2 TBSP. Lemon Pepper

Turn on slow cooker on high, brown pot roast on all sides on the stove top then place in the slow cooker top with all the ingredients from above pour water just above the veggies stir and cook for about 6 to 8 hours depending how tender you want it.  Top pot roast with gravy. Enjoy I served it with a side of garlic butter rice and My Homemade Roll link below
