Texmex Easy Homemade Enchiladas

2 lb. ground meat
3/ 15oz. cans chili with beans
2 oz. tomato sauce
1/2 onion diced
20 corn tortillas
1/2 tbsp. cumin
1/2 tbsp. garlic
1/2 tbsp.chili powder
1/2 tbsp.Knorr tomate
1/2 tbsp.Knorr pollo
2 cups of shredded cheese or more depends on how cheesy you want the enchiladas
4 to 6 tbsp. oil add more if needed



Preheat Oven at 375 degrees.
 Brown ground meat







When meat is done browning drain off fat add the onion cook until translucent, then add tomato sauce and spices mix well. now add chili with beans mix well



 
  soften tortillas in hot oil set aside



 




grab a tortillas fill with chili meat mix and some shredded cheese
 
 
roll and place in a 9x13 glass or metal dish

 
once all tortillas are filled and rolled smother the top with the rest of the chili meat
 
 
topped with the rest of the cheese Spread cheese evenly over mixture

 
Bake until cheese is melted
 
 
serve with Mexican rice and beans enjoy

Fluffy Flavorful Homemade Pancakes

Homemade Pancakes
2 c all-purpose flour
4 tsp.  Baking powder
1/4 tsp. salt
1/4 cup  Sugar
1/4 cup malt powder milk
1 1/4 cups milk or butter milk or heavy cream
2 egg
2 tsp. vanilla
1 tsp. oil


Directions

In a large bowl, add the flour, baking powder, salt, malt powder milk, and sugar mix with a Wisk or hand mixer, then add milk, oil, vanilla, and egg mix until smooth. Heat a lightly oiled griddle or frying pan over medium high heat. Scoop the batter onto the griddle or frying pan, Brown on one side of the pancake, on the top side you will start to see bubbles forming that means pancake is ready to flip over, flip and brown the other side, pull out and butter right away, lightly oil the pan again using a paper towel be careful you don't burn yourself, and repeat. Serve hot smother with more butter if you like lots of butter and syrup or any topping of your choice...

Homemade Caldo De Res (Beef Soup)



I use a roaster

2 lbs. of short beef ribs
1 large tomato, diced
3 large. Potatoes cut into 6 to 8 pieces
1 onion, sliced
4 carrots, chopped or if you like carrots like I do I buy the mini carrots in a bag 2 lbs. but that’s me and add them all.
1 of head of cabbage, cut in 8 pieces
2 medium sliced green zucchini
2 medium sliced yellow zucchini
1 medium green bell-pepper
3 corn on the cobs cut in 3 or you can use frozen
1 small bag of veggie mix frozen
2 tbsp. garlic
2 tbsp. Ground Cumin
2 tbsp. of Knorr Tomate/Tomato
2 tbsp. of Knorr Pollo/Chicken add more
4 oz. tomato sauce
1 bushel chopped fresh cilantro
 uncle chris spice set aside let them rest for about 5 minutes then sear on each side then add to boiling water


In a roaster set at 400* add 20 cups of water turn on while you get everything ready.

 add all the spices mix and taste, if you needed add some salt taste as you can see in the ingredients I didn't include salt, it's because the Knorr Pollo and the Knorr Tomate have salt in it, so add as much or as little as you want to your tasting.

sprinkle all the ribs with uncle chris spice set aside let them rest for about 5 minutes then while the ribs are resting get a pan add 1 to 2 tbsp. oil heat at a medium high, with tongs grab one of the ribs and sear on all sides, set on a plate to rest while you sear all the ribs. 
In the roaster add ribs and all the spices cover with a lid, leave, let it boil for about an 1 hour to 1 1/2 depending how tender you want the beef, I like mine falling off the bone. after the hour or 1 1/2 if using corn on a cob, at this time add potatoes, carrots, onion, green bell-pepper, tomato stir; cook it for an other 25minutes, then add zucchini, veggie mix frozen, cabbage, & cilantro cook for another 20 minutes with lid on. Serve hot. Just before eating, add a scoop of Mexican rice to your bowl, squeeze in fresh lime juice, salsa or tabasco to taste. Warm corn tortillas or flour rub with lemon add avocado.

PopCorn Balls

PopCorn Balls.
 
8c of popcorn
3tbsp butter
2c of mini marshmallows 
4tbsp of jello powder any flavor mine was strawberry I wanted the popcorn balls to be pink.  
 
Have your popcorn popped set aside, in a safe microwave bowl add your butter, marshmallows, and the jello melt for 90 seconds with a rubber spatula mix it if some of the marshmallows are still showing heat for another 10 seconds be careful it's a little hot pour over popped popcorn mix well.
 
 
 
Put on gloves and start forming the balls.

Place on a wax paper let set for about 15 minutes.
 

 
Eat them or place in a Baggie and give them out for Halloween or at a birthday party like I did enjoy.

Turkey Potpie

Turkey Potpie yummy made with my leftover turkey and pie dough. Sheared Turkey set aside in a pot boil water add salt garlic pepper diced onions, cube potatoes, boil until soft add a bag of frozen veggie mix like peas,carrots,corn, and green beans drain and add a can of cream of mushrooms, water and 3 pks of chicken or turkey gravy Pouches heat until thicken mix all together pour into a baked pie shell top with another raw pie shell bake until golden brown let set 10 min.

Homemade Chili

Homemade Chili 


Ingredients:
2 pound ground beef
1 onion, chopped
1 tomato
1  of bell pepper
1/15oz. chili ready can tomatoes
1/4 cup chili powder
2 tbsp. knorr tomate
2 tbsp. knorr pollo
1 1/2 packs of chili mix powder
1 lb. Pinto Beans cooked
Directions: Recipe for homemade beans click on link below.

In a large pan over medium heat, Brown your ground beef until well done drain all fat and then add your chop onions, bell pepper, and tomato. Sauté until onions are translucent add all the dry ingredients mix all together. Now add all of the meat and veggies to the beans let it cook for about 45 minutes more. Let it rest for another 20 minutes. Enjoy. Oh and if you do not want to cook fresh beans then buy 2 can of pinto beans still is very good.

Homemade Chicken Biscuit Pot-pie

Homemade Chicken Biscuit Pot-pie. Bake or boil chicken let cool, Sheared chicken set aside. In a pot boil water add salt, garlic, pepper, dice onions, cube potatoes, boil until soft add a bag of frozen veggie mix like peas,carrots,corn, and green beans drain and add a can of cream of mushrooms, water and 3 packs of chicken or turkey gravy Pouches heat until thicken mix all together pour into a baking dish top with ready to use Biscuits bake at 350 for about 10 to 15 minutes or until biscuits are done golden brown.
