Banana Bread Pudding


Banana Bread Pudding

1 loaf of regular bread cut into large crouton size spread on a cookie sheet and toast in the oven as if you were making croutons.

5 eggs
2 1/2 c.  Milk
½ c. condense milk
½ c. heavy cream
2 tbsp. melted butter
1 tbsp. vanilla extract
1 tbsp. banana extract
3 large mashed bananas
2 tsp. cinnamon
1/2 c. sugar
½ c. brown sugar
½ tsp. salt

Preheat oven to 325*

In a large bowl combine everything except the bread mix well now add the toasted bread mix  let it soak into the bread once the bread has soaked all the mixture scoop into 2 loaf pans that have been sprayed with a non-stick baking spray bake for 45 minutes on a 325*

This pudding taste so much better once it is cold I top this bread pudding with a banana pecan glaze and for that all you need is a stick of butter 1, ½ c of brown sugar, and 1c.pecans, heat over medium heat until it starts to boil turn of and add 1 tsp. vanilla and 2 sliced bananas to this serve it warm over the cold bread pupping or hot cakes where ever you like to use it.

(Mexican Bread Pudding)

1 loaf of bread you can layer it or cut into pieces with a knife, large crouton sizes. put on a cookie sheet in the oven to toast to a medium brown color.

32 oz. Shredded yellow cheese  

2 cup Raisins you can add more un-boiled raisins when you are layering or mixing if you like lots of raisins

1 cup Peanuts or pecans whichever you like (optional)

2 piloncillo (Brown sugar cane) I use 2 but some like less

2 small pack of cinnamon sticks or 1 medium size pack

2 tsp. Cinnamon

1 Star Spice Anise

1 tsp. vanilla

1/4 c. sugar

6 whole cloves

2 c. whole milk

2 c. evaporated milk

2 c. heavy whipping cream





Preheat oven 325*

   Boil all 6 cups of milks, add the raisins, cinnamon sticks, cloves, Star Spice Anise, and the piloncillo boil until the piloncillo is dissolved turn heat off add vanilla let it cool of, before you add the liquid to the bread pull out cinnamon sticks , cloves, Star Spice Anise out of the syrup mix and throw away, also scoop out raisins add it to the bread, In a large bowl add cheese, peanuts, raisins and cinnamon powder mix well, now add toasted bread and mix well.  Now that the syrup is cool pour over the bread and mix just enough to soak all the bread you might use all the syrup, ( let it soak into the bread)  if you have any syrup water left that’s ok just make sure all the bread is moist mix well now scoop into two loaf pans that have been sprayed with a non-stick baking spray, bake at 325* for 45 minutes  more/less every oven is different use a toothpick to check for doneness.

Zucchini Bread


Zucchini Bread

Ingredients

1 tsp. cinnamon

1 tsp. salt

1 tsp. baking soda

1 small box of instant pudding French vanilla or banana flavor

1/4 tsp. baking powder

3 cups flour

1 c sugar

1 c brown sugar

3 eggs

1/3 c oil or melted butter

1 teaspoon vanilla

2 c zucchini, grated

Instructions

Preheat oven to 325* – 350* depends on your oven. Spray your bread pans with baking spray. Makes 2 large loaves

In a large bowl combine all ingredients accept zucchini, Mix well, now fold in your zucchini, if using nuts fold in 1 c of nuts.
      Bake for about 30-45 minutes or until toothpick comes out clear

Pumpkin Banana Bread Loaf


Pumpkin Banana Bread Loaf

Ingredients

3 c flour
1 tbsp.  Ground cinnamon
1 tsp.  Ground nutmeg
1 tsp. all spice

1tsp. Pumpkin Spice
1 tsp.  Baking soda
1/2 tsp.  Salt
2 c sugar
1/3 c butter melted
3 eggs
1 /15oz. can pumpkin puree (not pie filling)
Glaze and Pecans/Walnuts are Optional

Preheat oven to 325* – 350* depends on your oven. Spray your bread pans with baking spray. Makes 2 large loaves


In a large mixing bowl add bananas mix until broken down a little smooth with chunks now add the rest of the ingredients Mix well, if using nuts fold in 1 c.
Bake for about 30-45 minutes may take a bit longer just check with a toothpick if it comes out clean then it’s done.

For glaze

 
1 8oz. cream cheese room temperature
2 tbsp. milk
1/2c to 1 cup powder sugar depending on how sweet you like it.
 
Mix all ingredients very well until very creamy place in refrigerator until ready to use, pour over cool Pumpkin bread loaf

Ginger Bread Loaf


Ginger Bread Loaf

 

1 ½   flour
1½ tsp. baking soda
4 tsp. ground ginger
2 tsp. ground cinnamon
1 tsp.  Ground all spice
1/8 tsp.  Salt
¾ c. brown sugar
7 tbsp. milk
3 eggs
3 tbsp.  Maple syrup
3 tbsp. molasses
½ c. butter


Preheat oven to 350°F makes 1 loaf
Put all dry ingredients into a bowl mix well with a Wisk.

Melt butter set aside and let cool add all the other wet ingredients to your dry ingredients mix well now add butter. Bake about 45 to 60 minutes until just firm to the touch, insert a toothpick to check if it’s baked toothpick must come out clean. Enjoy

For glaze

1 8oz. cream cheese room temperature
1 tsp. maple syrup
1 tsp. molasses
2 tbsp. milk
1 cup powder sugar

Mix all very well until very creamy place in refrigerator until ready to pour over cool ginger bread loaf

Texmex Easy Homemade Enchiladas

2 lb. ground meat
3/ 15oz. cans chili with beans
2 oz. tomato sauce
1/2 onion diced
20 corn tortillas
1/2 tbsp. cumin
1/2 tbsp. garlic
1/2 tbsp.chili powder
1/2 tbsp.Knorr tomate
1/2 tbsp.Knorr pollo
2 cups of shredded cheese or more depends on how cheesy you want the enchiladas
4 to 6 tbsp. oil add more if needed



Preheat Oven at 375 degrees.
 Brown ground meat







When meat is done browning drain off fat add the onion cook until translucent, then add tomato sauce and spices mix well. now add chili with beans mix well



 
  soften tortillas in hot oil set aside



 




grab a tortillas fill with chili meat mix and some shredded cheese
 
 
roll and place in a 9x13 glass or metal dish

 
once all tortillas are filled and rolled smother the top with the rest of the chili meat
 
 
topped with the rest of the cheese Spread cheese evenly over mixture

 
Bake until cheese is melted
 
 
serve with Mexican rice and beans enjoy

Fluffy Flavorful Homemade Pancakes

Homemade Pancakes
2 c all-purpose flour
4 tsp.  Baking powder
1/4 tsp. salt
1/4 cup  Sugar
1/4 cup malt powder milk
1 1/4 cups milk or butter milk or heavy cream
2 egg
2 tsp. vanilla
1 tsp. oil


Directions

In a large bowl, add the flour, baking powder, salt, malt powder milk, and sugar mix with a Wisk or hand mixer, then add milk, oil, vanilla, and egg mix until smooth. Heat a lightly oiled griddle or frying pan over medium high heat. Scoop the batter onto the griddle or frying pan, Brown on one side of the pancake, on the top side you will start to see bubbles forming that means pancake is ready to flip over, flip and brown the other side, pull out and butter right away, lightly oil the pan again using a paper towel be careful you don't burn yourself, and repeat. Serve hot smother with more butter if you like lots of butter and syrup or any topping of your choice...

Homemade Caldo De Res (Beef Soup)



I use a roaster

2 lbs. of short beef ribs
1 large tomato, diced
3 large. Potatoes cut into 6 to 8 pieces
1 onion, sliced
4 carrots, chopped or if you like carrots like I do I buy the mini carrots in a bag 2 lbs. but that’s me and add them all.
1 of head of cabbage, cut in 8 pieces
2 medium sliced green zucchini
2 medium sliced yellow zucchini
1 medium green bell-pepper
3 corn on the cobs cut in 3 or you can use frozen
1 small bag of veggie mix frozen
2 tbsp. garlic
2 tbsp. Ground Cumin
2 tbsp. of Knorr Tomate/Tomato
2 tbsp. of Knorr Pollo/Chicken add more
4 oz. tomato sauce
1 bushel chopped fresh cilantro
 uncle chris spice set aside let them rest for about 5 minutes then sear on each side then add to boiling water


In a roaster set at 400* add 20 cups of water turn on while you get everything ready.

 add all the spices mix and taste, if you needed add some salt taste as you can see in the ingredients I didn't include salt, it's because the Knorr Pollo and the Knorr Tomate have salt in it, so add as much or as little as you want to your tasting.

sprinkle all the ribs with uncle chris spice set aside let them rest for about 5 minutes then while the ribs are resting get a pan add 1 to 2 tbsp. oil heat at a medium high, with tongs grab one of the ribs and sear on all sides, set on a plate to rest while you sear all the ribs. 
In the roaster add ribs and all the spices cover with a lid, leave, let it boil for about an 1 hour to 1 1/2 depending how tender you want the beef, I like mine falling off the bone. after the hour or 1 1/2 if using corn on a cob, at this time add potatoes, carrots, onion, green bell-pepper, tomato stir; cook it for an other 25minutes, then add zucchini, veggie mix frozen, cabbage, & cilantro cook for another 20 minutes with lid on. Serve hot. Just before eating, add a scoop of Mexican rice to your bowl, squeeze in fresh lime juice, salsa or tabasco to taste. Warm corn tortillas or flour rub with lemon add avocado.

Empanadas


Empanadas Dough

3 cups of all-purpose flour
2 tsp anise spices whole
6 oz. of butter cut into pieces,
1 egg
4-5 tbsp. of cold water depending on the climate in your area, for more flavoring boil water with a tbsp Anise spice and let cool then set in the freezer to make it even cooler.

Directions:

Place all ingredients except eggs in the freezer before you mix it together.

Combine the flour and salt in a bowl or food processor or a standup mixer. Add the butter, water and egg, mix until it forms into a single lump of dough.  Roll into a ball then flatten wrap in plastic wrap and place in the fridge for about half-an-hour. Roll out the dough cut out circles like a small plate or with a round cutter.

Empanada Filling:

Ingredients

3 tbsp. butter
1 ½ cup firmly-packed dark or lite brown sugar
1 ½ cup pumpkin puree (NOT pumpkin pie filling you can use this but the taste of the empanada will be a little different)
1 ½ tsp. ground cinnamon
¼ tsp. ground cloves
¼ tsp. ground nutmeg
¼ tsp. ground all spice
¼ tsp. ground pumpkin spice
1 1/2 tsp Anise

Directions



 In a medium saucepan over medium heat melt the butter and stir in the brown sugar stir for a few minutes until the sugar dissolves, Stir in the pumpkin and spices. Cook over medium heat for a few minutes until the pumpkin begins to stiffen. Remove from heat, let the filling cool entirely before filling the empanadas.

                                                               
                                                 Baking Empanadas
Directions:
Pre-heat oven to 325 to 400 * depends on your oven some are hotter than others I usually place mine at 325*

Spoon filling into the middle of each pastry circle. Fold the dough in half over the top of the filling, creating a pocket. Press air out as much as possible to seal with the edges use an egg wash all around the edge. Crease the edges with a fork or your fingers, Coating the outside of the empanadas with egg wash. Sprays a cookie sheet with non-stick baking spray, arrange empanadas Bake for about 15 minutes or until golden brown. Sprinkle with cinnamon & sugar soon as they come out of the oven. Serve hot or cold

PopCorn Balls

PopCorn Balls.
 
8c of popcorn
3tbsp butter
2c of mini marshmallows 
4tbsp of jello powder any flavor mine was strawberry I wanted the popcorn balls to be pink.  
 
Have your popcorn popped set aside, in a safe microwave bowl add your butter, marshmallows, and the jello melt for 90 seconds with a rubber spatula mix it if some of the marshmallows are still showing heat for another 10 seconds be careful it's a little hot pour over popped popcorn mix well.
 
 
 
Put on gloves and start forming the balls.

Place on a wax paper let set for about 15 minutes.
 

 
Eat them or place in a Baggie and give them out for Halloween or at a birthday party like I did enjoy.

Turkey Potpie

Turkey Potpie yummy made with my leftover turkey and pie dough. Sheared Turkey set aside in a pot boil water add salt garlic pepper diced onions, cube potatoes, boil until soft add a bag of frozen veggie mix like peas,carrots,corn, and green beans drain and add a can of cream of mushrooms, water and 3 pks of chicken or turkey gravy Pouches heat until thicken mix all together pour into a baked pie shell top with another raw pie shell bake until golden brown let set 10 min.

Homemade Chili

Homemade Chili 


Ingredients:
2 pound ground beef
1 onion, chopped
1 tomato
1  of bell pepper
1/15oz. chili ready can tomatoes
1/4 cup chili powder
2 tbsp. knorr tomate
2 tbsp. knorr pollo
1 1/2 packs of chili mix powder
1 lb. Pinto Beans cooked
Directions: Recipe for homemade beans click on link below.

In a large pan over medium heat, Brown your ground beef until well done drain all fat and then add your chop onions, bell pepper, and tomato. Sauté until onions are translucent add all the dry ingredients mix all together. Now add all of the meat and veggies to the beans let it cook for about 45 minutes more. Let it rest for another 20 minutes. Enjoy. Oh and if you do not want to cook fresh beans then buy 2 can of pinto beans still is very good.
